Tangy Slow Cooker Pork Roast

Apparently there are hundreds of people with different taste buds from my spouse and me. We both TRIED to eat it but found its combined sweetness/sourness vile. The two dogs got a big helping; the rest went into the trash. Try this on a small scale before you commit to it.

Balsamic Roasted Pork Loin

After reading many of the reviews, I made it a point to have on-hand high-quality balsamic vinegar. I then cooked the loin exactly as the recipe instructed (adjusting the ingredients to a 5-pound loin). This must be one of those dishes that appeals to particular tastes. While my spouse and I can eat it (in small servings), we definitely do not LIKE it. (Who can afford to waste 5 pounds of meat these days?)

Vegan Black Bean Soup

The initial draw of this recipe was ease and inexpensiveness--and it WAS both easy and inexpensive. Plus, for being so easy and easy on the pocketbook, very tasty. As others have mentioned, the sodium in the canned goods can be a concern, so I used low/no salt canned goods only and added no salt (now I can only imagine that all that additional salt would make it practically inedible). I also didn't have a can of corn so used a no-salt added can of mixed veggies instead. Finally, because I hope to share it with vegetarian friends, I used vegetable broth instead of chicken broth.

Angel Hair with Feta and Sun-Dried Tomatoes

Love this recipe. Like others, I've made some adjustments both times I've made it (e.g., more garlic, using the oil from sun-dried tomatoes in oil, adding basil, sauteing most ingredients before mixing with pasta and cheeses)--but it's so easy and so flavorful. (I'll admit it, I'm a sucker for feta cheese.)
