Delicious Herbed Spinach and Kale Balls

Great way to prepare a quick and healthy snack. I found a 4lb bag of frozen kale at my local Costco for 3.99 so these will become a staple in my house. I used panko because that's what I had and used half fresh Parmesan and half grated Parmesan. I also chopped the kale more because there were quite a few larger stems. I found my cook time to need an additional 7 to 10 minutes. Good right out of the oven, cold out of the fridge or reheated as a side fir dinner.

Turkey in a Bag

WATCH YOUR TIME! My husband and I have used this method for the last 3 years. By far the best turkey we have ever had and we continue to get rave reviews about it. Here is our secret: Thaw turkey for 5 days in fridge. Follow direction as stated above (although we use stuffing and fill the bird within and inch or so of top of cavity). Put 6 slits in the bag. When it comes to timing We usually have a 16lb bird that we cook at 350 for 2 hours and 15 minutes. When the time is up we take it out of the oven and put the lid of the roasting pan on it. The turkey serving platter then sits on top. We leave it on the counter for 1 hour and 15 minutes. Even then, when we go to take it out of the pan, it is too hot to touch with bare hands. Snip the corner of the bag as someone is holding the bird up to get out juice for gravy. Carve up the bird and enjoy!

Quick Lemon Poppy Seed Bread

I've made this bread now for 3 different occasions and all have received rave reviews. Adults and children alike love this bread. I've baked large loaves, mini loaves, mini muffins, oversized muffins and bundt and all have turned out great. Last time I dropped a teaspoon of lemon oil in and I think it intensified the lemon flavor a bit. I use my kitchen aid mixer and mix med-high for 2-3 minutes. Highly recommended for summer gatherings of all kinds.

Irish Cream Creme Brulee

I've made many varieties of creme brulee. This one had us all raving last night. The Irish cream flavor that comes through is great. Everyone was very surprised to find out that I only used 3 tbs of the liqueur. I will definitely make this again.

Spiced Quinoa

I am always looking for new ways to prepare quinoa. I swapped out pine nuts for pecans and garbanzos for northern beans. I enjoy this dish as a healthy afternoon snack. I do prefer it heated as it brings out more flavors. Thanks for a great recipe.

Easy Cookies

Ok for cookies in a pinch. I agree with others that they are very sweet (and I love sweets). They taste better than they look. The ones in the picture look much thicker. I found them to be very flat. It is a recipe that I will work with to try to better them. As for now, I will stick with a basic sugar cookie recipe.

Dawn's Candied Walnuts

This recipe was so quick and easy. I am not a candy maker but managed to do it perfectly the first time. I too put a bowl of ice cold water next to the sauce pan and periodically dripped the sugar mix into the water. I noticed a change around 6 minutes 30 seconds and knew that is what "soft ball" must mean. I also used Silpat to spread the nuts on and they turned out beautifully. If you are a snitcher chew a piece of gum to avoid eating too many.

Spicy Chipotle Turkey Burgers

Best turkey burger ever! I am a big fan of chipotle chili's in adobo sauce. I have turned on all of my friends to this burger. Full of flavor. I used provolone cheese and it was a hit. Look up other recipes with the chili's in it so you can use up the rest of the chili's and the sauce. Check your international isle (if you have one) at your grocery store. They are usually sold in a 7 oz can in the Mexican section.

Zesty Slow Cooker Chicken Barbecue

This is the greatest no fuss crock pot recipe I have found yet. I will suggest to do the longer cook time on low. I have done both and found that the 8 hour low cook time provides a much deeper flavor. You can get away with 4 hours on high in a pinch. I was quite surprised at how much we all enjoyed the chicken over a baked potato. I am thinking of putting liquid smoke in next time!
