Delicious Egg Salad for Sandwiches

I actually forgot to buy the green onion and this recipe is just perfect for the half-pint picky eaters in my house. Its a great basic recipe as is or without the green onion.

Spicy Grilled Shrimp

It is too salty. Would probably work with about half the coarse salt. As my 10 yr old daughter put it, "it has a good bite, but the salt is competing with the spices." We want to try this recipe again but will use about 1/2 tbsp coarse salt.

Slow-Cooker Corned Beef and Cabbage

Excellent! Loved the veggies w/ the cabbage! Only added 1 garlic clove for some extra flavor. Used Guiness -no substitutions there! :)

Pumpkin Roll Cake

Use alot of powdered sugar on the towel. Can be difficult to roll up if you skimp on the powdered sugar.

Too Much Chocolate Cake

Couldn't tell when it was done. The top was crusty after baking for 55 minutes, but the toothpick came out w/ batter all over it...or was it melted chocolate chips??? After cooling for the time specified, it collapsed in the pan before I even inverted it.

Mom's Best Peanut Brittle

I burned the first batch because the candy thermometer wasn't in the proper place. Second try was perfect. Just make sure the candy thermometer doesn't touch the bottom but that it's submerged in the liquid.

Oatmeal and Wheat Flour Blueberry Pancakes

Excellent, but when I recalculated for 4 servings, the amount of blueberries stayed the same and it was way too many. Probably could cut back to about a 1/4 cup and be plenty. Excellent recipe and I used buttermilk. Hubby loved it and kids raved!
