Paul's Pumpkin Bars

Beware- you may gain a few pounds eating these! I followed others' suggestions using 3 eggs, double the pumpkin, added some extra cinnamon, plus a pinch of nutmeg and cloves. Used about 1/2 cup oil and 1/2 cup applesauce, and it was still extremely moist! For the frosting, used 6 oz cream cheese instead of 3 oz, and kept the rest of the ingredients the same. They were a huge hit and were gone fast! This recipe is a keeper!

Bread and Celery Stuffing

Perfect, basic stuffing- just like my mom would make for Thanksgiving. I either buy the unseasoned bread cubes, or slice a loaf of bread into cubes. I added a bit more poultry seasoning than it called for. Also for thanksgiving, I add some of the cooked turkey giblets. Bake in a corningware pan with a lid, then remove the lid the last few minutes to give it a little crisp.

Buttercream Icing

This was a very easy, quick recipe. If you want something that tastes similar to apple pie but don't want all the work, this is your recipe. Topped with some vanilla ice cream and caramel syrup for a tasty treat!

Meatloaf...a Little Southwest Style

This recipe was different, but I wasn't hot over it. It was so moist, it fell apart when cut into. I had to eat it like ground hamburger rather than slice it. Maybe more breadcrumbs or using one egg instead of two would have helped.

Beer Bread I

I took others suggestions and made the sugar 1/2 cup. Used lite beer. It came out delicious! A great substitute to the expensive catalog packages! I cut into square bite size pieces and served with dip. Wonderful!

Burgundy Pork Tenderloin

I cooked as suggested but added 3/4 cup sliced mushrooms. Also, I used Lambrusco since that was the only red wine I had and wouldn't use that wine again. I wish I had known about the burgandy wine before I made this. I'm sure using the right wine must make a huge difference. It was still a very quick and easy recipe I would make again.

Brownie Pie

This is a simple to make yet very satisfying desert. I, like a few others, added about 1/4 cup melted peanut butter over the warm brownie before adding the pudding mixture. Delicous!!! I can't wait to make again for the holidays!!

Chicken Florentine Casserole

I made this for Father's Day and everyone raved at how different and tasty it was. The only diffence is I doubled all ingredients except I used 3 cans of spinach instead of 4 and used 1 cream of mushroom soup and 1 cream of chicken soup. I used baby bella mushrooms, cooking them and the spinach in light butter before spreading in a lasagna pan. I also lightly cooked the chicken in some olive oil before placing on the spinach layer. Cooked at 350 for 30 minutes topped with 1.5 cups mozzerella cheese, then added the other .5 cup for the last 10 minutes. Served over white rice with a salad and italian bread, this recipe makes a truly delicious meal! Thanks.
