Brown beans are a inexpensive, simple meal topped with chopped onion and paired with cornbread. You can speed up the process by using a pressure cooker at 15lbs for about 30 to 45 minutes. Also, be sure to follow the recipe and add the salt later; the beans will not become as tender if you add the salt before cooking.

Peanut Butter Cake II

My family loved this cake. The icing was incredible. I followed the recipe except that I whipped up an extra half cup of the heavy cream and then folded it into the icing before putting it on the cake. It wasn't necessary, but I don't like my icings too sweet and the extra whipped heavy cream brought the sweetness down to a level I like.

Breaded Brussels Sprouts

I glad a saw this recipe. We enjoy roasted brussel sprouts, but these were even better. My son did not admit to liking them, but he ate them without the normal amount of complaining-- which means that as far as brussel sprouts go, in his book, they were as good at it gets.

Easy Hummus

Super easy, and very good. I used canned jalepenos. I think fresh jalepenos would make it a bit spicier, but I liked the mild flavor the canned peppers created. I also added a little olive oil as recommended by others. Since finding the recipe last week, we have snacked through three batches. Thank you for a healthy and delicious recipe.

Dad's Pan-Fried Green Beans

Yum, these were delicious. I didn't have sesame oil, so I used a little peanut oil and tossed some sesame seeds in. It's flavorful but yet not a heavy side dish. I would make this for company. On the downside, my children did not like it at all, so they'll be eating plain green beans the next time that I make this for my husband and myself.

Pineapple Angel Food Cake I

Super easy. I added 1/2 cup coconut as someone suggest, and think I'll add 1/2 tsp. rum extract next time. It did require about ten extra minutes in my oven. So, for those who had trouble with it falling, I would suggest to cook it until it is golden brown AND has an even surface. (If not done, the center appears higher than the sides.) It was so moist that I don't think you could easily dry it out by adding five or ten mintues to the baking time.

Morning Glory Muffins II

Delicious! We're counting calories and fat, so I omitted the vegetable oil and replaced it with an equal amount of plain yogurt (actually, it was probably about 3/4 cup yogurt, because I had to add more to get all the dry ingredients moistened). Very moist. I may try reducing the sugar a little next time to futher reduce the calories; they were not too sweet for us, but I think they'd still be sweet enough with a little less sugar. Thank you for a great recipe.

Banana Nut Coconut Cake

Yum. I didn't have time to let it cool and ice it, so I put a broiled coconut icing on it and served it warm. Next time, I'll try the banana coconut icing.

Bunny Cookies

I also made them a little thicker for a shortbread type cookie. For a preschooler's craft, we cut out large hearts to paste together (with the point of the top heart touching the dip in the bottom heart)with royal icing and decorate as Valentine Bears. They were tasty and pretty.

Chocolate Cream Pie I
