English Muffins

Reviewed: May 23, 2011
These are so delicious. The first batch was almost gone before I got the second one on the griddle. They don't taste like the store-bought kind, because they're homemade and better!

Pasta Fruit Salad II

Reviewed: Oct. 6, 2010
I'd have to agree with other reviewers. Pasta and fruit salad just don't mix. I even used tiny pasta instead of macaroni, and it just didn't feel right when you came across it.

Whipped Cream Cream Cheese Frosting

Reviewed: May 1, 2010
TRY IT! Don't let the so so reviews steer you away from this frosting it is so worth the effort you put into it! I froze the bowl I used for the whipping cream, used whipped cream stabilizer, and put it back in the freezer while beating the cream cheese. Then used a hot bowl and mixer for the cream cheese. And folded the two together by hand. It turned out perfect, and piped into high professional looking peaks on my cupcakes. SUPER DELICIOUS! And not too sweet like powdered sugar frostings can be.

Peppermint Chocolate Fudge

Reviewed: Dec. 6, 2009
Very delicious and creamy! We added 1t of pure peppermint extract, some regular marshmellows, and a bit of butter, and this fudge turned out perfect. Just the right amount of everything, as to not be too overwhelming.

Creamy Apple Cinnamon Raisin Oatmeal

Reviewed: Nov. 16, 2009
I used half the oats and water called for but kept the measurements on the spices, and it turned out great. I also added a tablespoon of ground flax seed. Very good, but almost too filling, I might have to make even less next time.

Freezer Vegetable Soup

Reviewed: Nov. 13, 2009
This is an awesome soup base! I made several changes (ie. used seasonings my family enjoys instead of dill, added more/different veggies), but was wonderful! My 5 picky children even ate it up! WINNER!

Chicken Pot Pie IX

Reviewed: Nov. 5, 2009
My SUPER picky kids ate this up! I made 1.5X the amount of filling, because many of the reviews stated their pot pie came out dry. I also cooked the bottom crust for 5 minutes before filling, and brushed both the bottom and top crusts with egg whites. I use onion powder instead of celery seed. And added garlic powder and herbs to both the sauce and vegetables. One of our new faves!

Pumpkin Oatmeal

Reviewed: Nov. 4, 2009
Great base recipe, but will surely need to be tweeked to your personal taste. I added 1T ground flaxseed and used brown sugar instead of cinnamon sugar.

Pumpkin Brownies

Reviewed: Nov. 4, 2009
These are so ridiculously delicious! I made them exactly to the recipe (had to cook a bit longer, maybe 45 min) for my little girl's PTG meeting. They were so good we tried to buy them back, but only ended up with 4.

Crazy Chicken Marinade Grilled Chicken

Reviewed: Oct. 7, 2009
A very good marinade. I let my marinade in the fridge for several hours, then baked the chicken (and didn't baste it). The spices and seasoning are wonderful, a little too much lime for my personal taste, otherwise great!

Chicken Tequila Fettuccini

Reviewed: May 4, 2009
My super picky kiddos LOVE this dish! I didn't add as much cilantro as called for as I'm not a big fan. I also used the Smokey Tequila-Lime Marinade (without the liquid smoke)recipe and baked the chicken ahead of time (many reviewers mentioned the chicken being flavorless when cooked according to recipe). Since I did this I ended up using the soy sauce to sautee the peppers. It tasted delicious! Definitely a repeat dish at our house!
