Cranberry Pecan Muffins

Wonderful! I added orange zest, cinnamon and a little cloves. I also used 1c fresh cranberries cut in halves. Next time I think I will use even more berries. These are sweet and delicious! A wonderful dessert item!

Chipotle Peach Salsa with Cilantro

Wonderful! This was even better than I had anticipated. I used white onions and about half of one jalapeno pepper instead of the red onions and minced chipotle peppers in adobo sauce simply because I did no have either on hand. I served it on chicken breasts that were cooked on the grill. I liked it better warmed slightly, so I piled the salsa on top of the chicken on th grill and let them sit for a minute to warm teh salsa. Wonderful flavor! I will use this one again!

Microwave Chicken Parmesan/Chicken Breast Cacciato

Quick and easy! I was a little bit hesitant to cook chicken in the microwave, but it works. To make this even quicker and easier, I used Italian bread crumbs and bottled sauce. We served it on whole wheat pasta. It was really good, better than I expected. Even my son ate this one and he is the world's pickiest eater.

Cantaloupe Crunch

Suprisingly good! I hate cantaloupe, but I absolutely loved this recipe! I made a 1/2 batch just to try it out because I really expectd this to taste gross. It was so delicious! It does not taste like canteloupe at all! I am making a full bath to bring over to my parents' house for Mother's Day dinner. I am sure it will be a big hit!

Pear Walnut Chicken

Sounded too bland, so I made the folowing changes: add one small white onion and about 1 Tbsp minced garlic(instead of garlic powder), add about 3/4 c sliced carrots, increase soy sauce a little, add fresh ground pepper. I also used fresh pears becuase I did not have canned and less chicken because we like less meat. I also subsituted pineapple juice for the apple juice and chicken broth for the water. I am not fond of walnuts, so I sprinkled cashews over the top. Served it all over rice. Pretty goo. I might make this again.

Sweet Potato Bread I

I made mini muffins. Excellent withthe following changes: 1c white and 3/4c wheat flour instead of all white flour, 3/4 brown and 3/4c white sugar instead of all white sugar and 1/3c orange juice (I used fresh squeezed) instead of the water. I also added about a tsp of vanilla extract, 1-2 tsp of orange zest and a little freshly grated ginger for extra flavor. I HATE sweet potatoes, but could not stop eating these muffins. They taste like pumpkin muffins. You would never know they have sweet potatoes in them. These are great!

Easter Story Cookies

Amazing cookies!! We now have a new Easter eve tradition! I made the following changes: almonds instead of pecans and add 1 tsp of vanilla for extra flavor. We made these the night before Easter and then brought some to Easter dinner with the rest of the family. They were a BIG hit! My son loved making them and retelling the Easter story to the family at Easter dinner. Everyone kept asking where I found the recipe, how we made these and how we got them to be hollow. We will be making these again!

Carrot Cheesecake with Crumb Crust

I love to make cheesecake and am told often how great mine is, so when I said I was bringing a carrot cheesecake to Easter dinner, everyone was excited. Anytime I make any other cheesecake, there is not a bit left over. I ended up taking most of this one home because no one could stomach it. I have never had a cheesecake turn out so awful! It looked plain gross and the flavor was more like a gingered pumpkin pie than a corrot cake. The cheesecake was awful. A few people took a small slice just to be polite, but after the first bite, they left it. I ended up feeding the leftovers to the dog. I was SO embarrassed! Next time I want a carrot cheesecake, I will just modify my usual recipe and make something that can be eaten without gagging. I will NEVER use this recipe again!
