Slow Cooker Pot Roast

Followed recipe as directed, (although I added potatoes) and was a great family meal - all 3 of my boys really ate it up. Doesn't get much simpler than this!

Spicy Chicken and Sweet Potato Stew

This was good, but no one raved - only change was I swapped chicken broth for water as others suggested. Nice warm meal for a bowl in front of the television perhaps.

Pinto Beans With Mexican-Style Seasonings

Great Mexican side dish. I used 1 can of pinto, and 1 can of black beans because I was short on time (didn't have time to fry the bacon either - but it must be a great addition!). Anyhow, used leftovers for burritos the next day - really good.

Tomato Zucchini Casserole

Great spring/summer side dish. I sliced and drained tomatoes in the am, and I did add salt to the tomato layer when assemblying. Did not bother with the onion in the bread crumb mixture. Really good & always gets great reviews. Has anyone prepped this the day before? Wasn't sure if it would get too soggy??

Gouda and Spinach Stuffed Pork Chops

These chops are good enough to serve to company - really tasty & simple! I brined my chops in the am for about 4-5 hours - this makes a huge difference with keeping the chops moist (you can even overcook a little and they should still keep their moisture). Any pork brine will do - there's tons of recipes. Grated my gouda and stuffed to the max. Had thick Costco chops and only needed to bake 30 minutes - don't overbake! Good stuff!

Slow Cooker Baby Back Ribs

Doesn't get much simpler than this - great, easy dish! I took the advice of others - cooked on high for 3 hr 45 min, then placed in uncovered baking dish in a 350 oven for 20 min; finished off broiling for 10 minutes. They look nice & crispy, but meat is still intact and juicy. Used a can of coke in place of water. Wouldn't say this is a "knock your socks off" recipe - but very good mid-week family meal!

Broiled Tilapia Parmesan

Great mid-week family meal, although my kids only take a few bites (7 & 10 year old). Reminds me of those quick meals mom used to make way back when - healthy fish topped with the stuff that isn't good for you, but makes it tastes so much better.

Chipotle Crusted Pork Tenderloin

I brined my tenderloin first then proceeded w/ dry rub - as others, reduced chipotle powder to 1 Tbsp - go for 1-1/2 Tbsp if you like spicy, and increased brown sugar to 6 Tbsp. Grill on med-high, 5 min per side was perfect!

High Temperature Eye-of-Round Roast

Gas Oven Users - beware! The oven does not stay warm enough to cook the meat. I took the advice of others and instead of turning the oven off at the required time, I turned it down to about 180 and cooked for 30 minutes, then turned off completely w/out ever opening the oven door. Sliced and meat was pretty bloody - popped back in the oven @ 350 for 15 minutes and that seemed to do the trick (being on the rare to med/rare side). Did not get the "melt in your mouth" meat that others did - rats! Did baste w/ browning sauce prior - added a little flavor, not much. Probably won't try this one again.

Rich Italian Sausage and Potato Soup

Add some extra pancetta and to spice it up, use the spicy Italian sausage (I needed to bake them for about 30 minutes) and extra salt at the end. Topped w/ Parmesan - was a meal in itself. No need to puree, if the potatoes are cubed small and cooked until really tender. Delicious!

Simple Chicken Brine

Say goodbye to dried out chicken! I marinated thighs and breasts for 4 hours, then proceeded with a recipe I had. BBQ'd and the chicken turned out lovely - even the kids said it was good. Do it!

Justin's Hoosier Daddy Chili

This is a very "safe" chili w/ lots of potential. I ommited the broth & added garlic w/ the onions - great consistency. I like a little kick & thought this recipe was missing that (did only use 4 Tbsp. chili powder, next time stick w/ 5). Overall, "family-friendly" recipe but not for your die-hard chili fan's.

Strawberry and Feta Salad

A beautiful salad & tasty too. I prepped the salad the day before (cut salad greens & wrapped in paper towel, then placed in a ziploc - sliced strawberries & placed in separate ziploc - made dressing) so party time, it was easy assembly. Replaced almonds with Trader Joe's Candied Walnuts. Yummy!!

Grilled Salmon I

I have numerous salmon recipes, as we eat it a couple of times a week. This is my favorite - followed recipe directions exactly & I thought it was perfect. No need to make any adjustments, maybe cooking time depending on thickness of salmon. A little on the sweet side, just the way I like it!

Party Pinwheels

There are so many versions of this appetizer - I don't think of these as anything special but they do always go at the parties and there's always compliments, so it must be me! Anyhow, I did use a variety of tortillas for "presentation", did not use the whole ranch dressing mix, used chopped spinach in place of celery, used diced olives instead of sliced and added chopped bacon. People loved them! Made the night before and sliced prior to the party. You can't go wrong with these.

'Calabacitas Guisada' (Stewed Mexican Zucchini)

This turns out so much better than it sounds. Great side dish to Mexican fare or Tex-Mex! Make ahead tip: I made this and then turned the stove off and let it sit in the pot for about an hour. Just simmered for about 8 minutes prior to serving. Also used Mexican-style stewed tomatoes - lovely!
