Mediterranean Quinoa Salad

Very good flavors but the dressing was a bit strong so I only used about 1/2 of what the recipe calls for and it was perfect. I also omitted the Feta since my husbands and GI tract are not fans and the chicken because I was using it as a side. It had enough zing even without the Feta. I have added it into our rotation.

Authentic New Orleans Red Beans and Rice

This was easy to prep and throw in the crock pot. I do recommend soaking the beans overnight: I cooked in the slow cooker on high for about 4 hours. I didn't have a ham hock but had andouille and used that. I cut the Tony's to 1/2 tablespoon with the andouille. My 4 yo and 3 yo old asked for seconds but all they could talk about was how spicy it was and I had to refill their waters about 3 times. It was exactly the right amount of spicy for my husband and I. If you are going to cook in the crock pot a good rule of thumb is to just cover the beans by about 1/4 inch because the amount of liquid you start with will generally be about what you end with.

Angela's Awesome Enchiladas

I made this exactly by the recipe except for using spinach tortillas because that's what I had and I think it added a little flavor. It was my first attempt at enchiladas: it was easy and did not disappoint my family.

Boilermaker Tailgate Chili

This is THE chili recipe at my house now. It does take awhile to assemble all the many ingredients but it tastes so much better than pouch chili that it is well worth the effort. I have found it to be a bit salty so instead of 4 cubes of beef bouillon, I use 3. I also left out the green and red peppers because my husband isn't a bell pepper fan.

Apricot Pork Tenderloin

Very good flavor and very easy. When I have homemade preserves I use our spiced peach preserves. I only make about 1/2 the glaze that the recipe calls for so as not to waste homemade preserves.
