About this Cook
It took me six months to realize I barely knew enough about myself to tell anyone else. So it's time to change this. I'm in my mid-40's, have made a TON of changes in the last year and have come to accept a lot of things. I'm a much happier person for it too. I'm also still learning things about me. :) I call myself a professional not because I think I know everything but because I spent 20 years working as head baker and pastry chef in 2 different shops. I was trained by some of the most talented European pastry chefs in the country and if I have "any" regrets at all, it is that I did not take the opportunity to go and train in Germany for two years when the offer was made to me. Such is life tho and life is still good. :)
My favorite things to cook
My passion for food definitely lies in the pastries department although I love to experiment with cooking and try new things. I've learned that I don't care very much for Southern Style Cooking and lately, anything with the words "cajun", "new orleans style", "on a stick", "gumbo", etc has the tendency to make my stomach curl in on itself. :/ I love spice and flavor, almost everything I make has some kind of hot spice or sauce or sausage in it. :D I would love to learn how to cook authentic Asian food, I love the flavors and spice...again, with the flavors and spice!

My cooking triumphs
Something that began as an interest 23 years ago, is now my passion and my trade. Nothing tastes better than that.
My cooking tragedies
I've had many tragedies, still do in fact! Does burning the poop out of a boiled egg count as a tragedy? WoW! I'll never forget that smell!!!!

Chuck's Favorite Mac and Cheese
I made this last week to serve with dinner. Leftovers? What leftovers!? Absolutely delicious and it's been requested again already! 5 stars from this household. :)

Pro Ganache
I'm not sure why this says store 3 days at room temperature. I wouldn't recommend it as it contains cream. I would also never use anything that has sat in the fridge for two weeks if there is cream in it. 3 days in the fridge tops.

BBQ Pork for Sandwiches
I'm on the same page as ginger with this recipe. Pork butt is a much cheaper cut of meat and it's tender as all get out with bone in. I use pork butt for any pulled pork recipe including this one.
