Quick Hoppin' John Soup

I made this recipe to celebrate New Year's day. I can use the luck! It was great. I used Jimmy Dean Sage Sausage. I cooked it with a chopped onion, green pepper, and celery. I drained and rinsed the fat. I was trying to keep the sodium low, but tasty. I used Zatarain's brown and wild rice mix, a 32 oz. box of low sodium chicken broth, 2 cans of Glory brand seasoned low sodium black eyed peas (drained). My tomatoes were organic and lower in sodium. I used 1 1/2 cups of water due to the additional chicken broth. The seasoned black eyed peas really made a difference, I think. They had really good flavor and a nice smoky smell. I didn't use additional salt, but did add some cayenne pepper and a dash of creole seasoning. This really was good. I can see how it could be varied using different meats, beans, and rice mixes. I will definitely make it again.

Ham Casserole

My husband and I enjoyed it very much. I used a whole small onion and half a large red bell pepper, because I thought it would need more flavor. My white sauce looked like it would be too thick, so I also added additional milk. I used a bit more cheese than called for too, because I love cheese. I do believe the portion size should be revised, as the two of use ate half the casserole. We're looking forward to leftovers tonight.

Slow Cooker Apple Crisp

I had a bag of apples I wanted to use up. I had seen this recipe and thought it would be a good one to prepare while my grandson napped. I doubled the amount of apples (Gala). I generally don't like things too sweet, so I added a little less sugar and upped the cinnamon. I also added a bit more walnuts, just because I love nuts. The topping didn't look crisp enough, so I took the lid off for the last half hour of cooking. It was delicious, and I will definitely make it again, trying the suggestion of adding oats.

Cheesy Sausage Zucchini Casserole

I enjoyed this casserole very much. I substituted brown rice for white, and hot turkey sausage for the pork sausage. I cooked 3 chopped cloves of garlic with the sausage. I did not find a need to drain the mixture before baking. If anything, it was a little dry. I think it depends on how watery your tomatoes are. Mine was very ripe and meaty. I will definitely make this casserole again.

Spicy Bean Salsa

My daughter was the first one in our family to make this. It is truly delicious! When I make it, I like to use fresh jalapenos in addition to the canned. I use minced garlic, not garlic salt. I don't feel it needs more salt. Unlike others, I do not add cilantro, because I don't care for it. The next time I make it, I will try it with diced grape tomatoes instead of canned.

White Chili

We love this chili. I use a block of pepperjack cheese because I've never seen cheddar with jalapenos. My cheese is a 10 oz. block. I always add additional salsa, probably closer to two cups. I cook the turkey with a chopped onion for more flavor. I also add a little garlic powder and chili powder. The quality of the salsa used and the heat really makes a difference. I prefer the chili when made with Pace medium salsa. It has a nice tang.

Blackened Salmon Fillets

I enjoyed this salmon recipe. I cut the salt to one teaspoon, as two would have been too much for my taste. I brushed my one pound fillet with one tbs. of unsalted butter before coating. Like other reviewers, I broiled it for 5 mins. and then finished it at 350 for 10 min. It was perfect!

Zucchini Pizza Bake

I enjoyed this recipe very much. I like a spicier dish, so I always add garlic and red pepper flakes are a must. It is also great with hot italian seasoned turkey sausage. Basically, anything you like on your pizza would be perfect on the tasty zucchini base. I may try it next time with mexican seasonings in the beef and add beans.

Bacon Ranch Pasta Salad

I was very disappointed in this recipe. The predominate flavor was salt. I followed the recipe as written. I used Oscar Mayer bacon and Hidden Valley Original Ranch dressing mix. It was served at a cookout and no one had more than one helping. I'm not sure how I would have altered the recipe to our taste, except to maybe use low sodium bacon. I won't try this recipe again.

Three Animal Italian Meatballs

These were very good meatballs. My turkey and ground beef amounts were slightly greater than the recipe called for, so after cooking a sample for seasoning, I found that I needed a bit more seasoning. I added some garlic powder, about a half cup of parmigiano reggiano and a few good shakes of worcestershire sauce. I did not brown them, I put them directly in my convection oven and then into a pot of pasta sauce. I will definitely make this recipe again.

Easy Broccoli Quiche

My husband and I enjoyed this quiche very much. My only changes were the substitution of cheddar for mozzarella. I placed half the cheese on the crust before filling. I also sprinkled the top with some parmesan. I found it necessary to bake for 50 minutes. I will be baking this again tonight with a Mexican blend of cheeses because that's what I have on hand.
