Chicken Enchiladas II

My picky nonliking chicken husband really enjoyed this recipe and so did my 2 year old. It was really easy to make and not time consuming. For something simple it tasted really good although I did not add the green onions or the green chiles.

Good Old Fashioned Pancakes

I'm not very good at making pancakes, even the boxed kind, but these were great. It was the first time I ever tried to make homemade pancakes. Mainly because I didn't have any mix on hand and I had all these ingredients in my pantry already. The batter was not liquidy, but more fluffy and airy. I was worried at first, but the pancakes themselves turned out nice and fluffy. I like to slightly fry our pancakes in a little bit of oil to give it a bit of a crispy edge. Not healthy I'm sure but delicious. Even my husband told me these were really good. Thanks!

Savory Garlic Marinated Steaks

We only had an hour to marinate our T-bones, but it still tasted delicious. I can't wait to try this and marinate for at least 24 hours. I bought good quality beef, so it was tender and as if we went to a restaurant. Even though we had an hour to marinate, we could taste the wonderful combination of flavors.

The Best Oatmeal Cookies

Really, these are the best. They are actually much better the next day, rather than fresh out of the oven. They stayed moist and chewy for several days. We are not a raisin family so I used chocolate chips instead (omit soaking). We loved these cookies, thanks.

Tilapia with White Wine Caper Sauce

G's Flank Steak Marinade

I put this in the broiler and it was delicious. It would probably be even better on an outdoor grill, but we really liked this marinade. My daughter loves flank steak, and I am no longer intimidated to make it.

Roasted Potatoes with Greens

This was really good although I baked for longer than posted yet my potatoes were still a little firm. Next time I will cut into smaller chunks. Served with G's Flank steak. Yum!!

Banana Sour Cream Bread

I usually make a different recipe, but tried this one and my family loved it. My husband said it was better than the usual one I make. I use a mini loaf pan, which makes cute little loaves. I used low fat sourcream, I Can't Believe it's Not Butter sticks and I mixed 2 1/4 cups each of white flour and whole wheat flour. Came out really moist and yummy. Only had 5 bananas, but it still had good banana flavor. Thanks!

Award Winning Soft Chocolate Chip Cookies

These cookies are so good. I recommend cutting the recipe in half and making two batches because just half the recipe was a lot in my kitchenaid mixer bowl. I don't think the whole recipe would have fit in it. I made half the recipe with vanilla and the other half with coconut cream pudding mix. I prefer the latter and my friend preferred the vanilla. Both are excellent, I'm sure other pudding mixes would be excellent as well. Thanks!!

Strawberry Oatmeal Breakfast Smoothie

My husband thought this was perfect. Other smoothies were not filling enough for him for breakfast and he would be hungry still. But he found this one to be filling enough to hold him over until lunch. It was also the right amount of sweetness. Next time I will try with 1/2 c. fat free yogurt and 1/2c. milk to cut back on calories.

Baby Carrots with Dill Butter

Crab Alfredo

This was crabtastic!! My DH was craving some crab and this fit the bill, along with some crab legs on the side. I did use 1 cup milk with 1 cup half & half. I didn't think there would be enough sauce, but there was plenty more than pasta and it fed the 4 of us with extra left over,which was still good the next day. I did use real dungeonous crab and parmigiana reggiano. It's easy to eat a lot and get totally stuffed, so pace yourself! I served with cheddar bay biscuits, but use club soda in place of milk for fluffier biscuits.

Chicken Monterey

We thought this was delicious. Unfortunately, I didn't have mushrooms, which I love, but that's okay. I butterflied the chicken, so two breasts fed my family of four and it only had to bake for about 15 min.-20 min., can't remember now. I served with fake mashed potatoes (cauliflower) and steamed broccoli.
