Slow-Cooker Chicken Tortilla Soup

We really liked this soup. It wasn't spicy for my children. I just put in two raw chicken breasts in the beginning of cooking and at the end shredded them and put them back in. They were perfectly cooked through. Thanks!

Amazing Italian Lemon Butter Chicken

This dish was delicious. I tried to use healthier ingredients, by using Smart Balance butter and half and half for the sauce. The sauce tasted by itself was overpowering with lemon, but when added to the chicken mixture, it blends in really well. I didn't ladle the sauce onto the pasta, just used what clinged to the meat mixture, so half the sauce was still in the pan when we were done eating and I didn't feel like we ate a ton of butter. The bacon really adds to the flavor and I didn't have capers, but love them so they would have been a great addition.

Sean's Falafel and Cucumber Sauce

Delicious!! I have had better sauce, but it still tasted good when tasted together with the falafel and some feta and lettuce in a pita. I pan fried mine and it does soak up a lot of oil. I'll try baking next time to see the difference in flavor. Edited:1/22/09= This time I used the food processor for the chickpeas, formed them into balls and did not flatten them. Deep fried them, and they did not get greasy at all, nor did they fall apart. Perfect!

Asian Lettuce Wraps

DH says these taste 10x better than the chinese restaurant. Very delicious!! I did use ground chicken and topped with chopped nuts and the sauce recommended by another reviewer. I did not use pickled ginger and did not miss it. I don't know how much different this would have tasted with it though. This dish should be doubled for a main dish or if you want left overs.

Chicken Monterey

We thought this was delicious. Unfortunately, I didn't have mushrooms, which I love, but that's okay. I butterflied the chicken, so two breasts fed my family of four and it only had to bake for about 15 min.-20 min., can't remember now. I served with fake mashed potatoes (cauliflower) and steamed broccoli.

Slow Cooker Chicken Taco Soup

We absolutely loved this meal. Extemely satisfying and delicious. Could not be easier. It has a bit of spice, but our kids were still able to enjoy it. I crisped up some corn tortilla strips to top it. I did use a can of chicken broth instead of beer. I also used 3 chicken breast halves and thought that was plenty of chicken.

Crab Alfredo

This was crabtastic!! My DH was craving some crab and this fit the bill, along with some crab legs on the side. I did use 1 cup milk with 1 cup half & half. I didn't think there would be enough sauce, but there was plenty more than pasta and it fed the 4 of us with extra left over,which was still good the next day. I did use real dungeonous crab and parmigiana reggiano. It's easy to eat a lot and get totally stuffed, so pace yourself! I served with cheddar bay biscuits, but use club soda in place of milk for fluffier biscuits.

Chicken Florentine Casserole

We really liked this dish. I just served fettucine on the side and it was delicious. If you want more sauce for the pasta, you'll definitely have to double the sauce, but I thought it was great as is. I did use frozen spinach, canned just didn't sound good. Perfect blend of flavors, but I seasoned the chicken with salt, pepper and garlic powder before baking and sliced them into strips before adding to the casserole.
