Chicken Enchiladas II

My picky nonliking chicken husband really enjoyed this recipe and so did my 2 year old. It was really easy to make and not time consuming. For something simple it tasted really good although I did not add the green onions or the green chiles.

Taco Casserole

In some parts of the dish the shells were not that crunchy. It did have a good flavor and I will make it again because the hubby and my 2 year old really liked it. I did not add the green chiles though.

Cheddar Bay Biscuits

I have not made this particular recipe, but my version is to use club soda in place of the water. This makes for fluffier biscuits. And I just use melted butter and garlic powder to brush on top. Yummy to the tummy!!

Fantastic Lemon Butter Fillet

I thought this was decent. It took forever for the fish (cod) to bake. After 35 min, I turned up the heat to 400 and baked another 10 min. or so. My husband said it was good, but I may not make this again.

Valentino's Pizza Crust

It was nice not to have to wait 30 min. to an hour for dough to rise. It was kind of sticky to work with when forming it on my stone, but it baked well and gave good results. I prebaked it with my sauce for 5 min. then topped it with mozzarella and basil and baked for another 10-15 min. The dough was ready by the time my mozzarella started to brown.

Black Bean Cigars

Great for a meatless dish, though not much flavor. I did forget the chili powder and cayenne, so that may be the reason for it. Kids liked it, that's what's most important.

Italian Wedding Soup I

So easy with ingredients on hand. Although my daughter didn't like the meatballs, the rest of us really enjoyed this with garlic breadsticks. Very hearty and filling. Needed an extra can of broth to make it more soupy. And try to make meatballs small to cook through fast.

Awesome Slow Cooker Pot Roast

Had better. Unfortunately, this was quite flavorless and my husband prefers a different recipe found on this site using italian dressing mix, aus jus mix and beef broth. (Can't remember the title) Sorry!

Chicken Piccata III

Never had chicken piccata before so I can't compare. The kids and I did like this dish. Very lemony. My hubby got home late and had his dish reheated and he wasn't too thrilled with the taste.

Best Tuna Casserole

Nice change of pace from chicken. Never made tuna casserole before. I give the dish a 3, it tasted good, but not something I would normally eat, nor did my kids care for it. My husband on the other hand gives it 4 stars. He says it's very nostalgic because he used to eat this in his MRE (meal-ready-to-eat)at 6AM in the Marine Corp when he was out in the field. But says this version tastes much better. I will make again, but only when he requests it.

Strawberry Spinach Salad I

This was so delicious! My husband even liked it, but he gives it a 4 for being too sweet. Maybe 1/2 T. sugar next time because the strawberries are sweet enough as well. My 4 and 2 year old even ate it. Thanks for helping us eat our greens:)

I love chicken but thought this was okay, however, the rest of my family did not like this. My husband is not a big chicken fan and said the sauce just tasted too much like chicken. Everything tasted like chicken. I actually got a tummy ache after eating. Unfortunately, we will not be making this again.
