Jay's Signature Pizza Crust

good crust. Baked on a stone but my toppings were getting really browned before the dough was ready. May try to prebake the dough for about 10 min. then top and bake again.

Cajun Seafood Pasta

Creamy Chicken With Pasta and Broccoli

This was quite bland, unfortunately. I even seasoned the chicken with salt, pepper and garlic powder, same with the sauce, but still there wasn't any flavor to it.

Swiss Chicken Casserole I

This was really easy to prepare and my whole family loved it. I added frozen broccoli florets and sliced mushrooms. They were a wonderful addition. I sliced the chicken breasts about a 1/2 inch thick pieces and baked for 40 min. I did not find this salty at all per other reviewers. I used the Healthy request brand.

Banana Sour Cream Bread

I usually make a different recipe, but tried this one and my family loved it. My husband said it was better than the usual one I make. I use a mini loaf pan, which makes cute little loaves. I used low fat sourcream, I Can't Believe it's Not Butter sticks and I mixed 2 1/4 cups each of white flour and whole wheat flour. Came out really moist and yummy. Only had 5 bananas, but it still had good banana flavor. Thanks!

Chicken Honey Nut Stir Fry

The kids and I thought this was wonderful. The flavors went very well together. I only gave it 4 stars because my husband didn't like it. He thought it was not authentic enough after being spoiled with real asian food on a recent business trip. The rest of us enjoyed it though.

Spaghetti with White Clam Sauce

I don't have anything to compare this to. I really didn't feel healthy eating this. Lots of oil and didn't have as much flavor as I thought it would. I guess I am the minority. Kids decided they don't like clams either.

Award Winning Soft Chocolate Chip Cookies

These cookies are so good. I recommend cutting the recipe in half and making two batches because just half the recipe was a lot in my kitchenaid mixer bowl. I don't think the whole recipe would have fit in it. I made half the recipe with vanilla and the other half with coconut cream pudding mix. I prefer the latter and my friend preferred the vanilla. Both are excellent, I'm sure other pudding mixes would be excellent as well. Thanks!!

Pan-Fried Steak with Marsala Sauce

I used thin cuts of T-Bone, which cooked pretty fast. I did forget about the rosemary which might have made a difference because I thought this was very bland. I usually make chicken marsala, which is better for me. I thought I had beef stock, but only had chicken which also might have made a difference. Otherwise, I didn't like this one at all.

Beef and Parmesan Pasta

Quick, healthy one pot meal. It's good but does need more flavor. Garlic, S&P and italian seasonings. Goes great with garlic bread and if the kids liked mushrooms I would have added them. Cooking time for me was longer. All the moisture was evaporated before my pasta was cooked through so I added 1/2 cup of water, which seemed to be just enough to finish cooking out the pasta.

Flourless Peanut Butter Cookies

Interesting recipe. I gave this a try because we wanted cookies, but didn't have butter or shortening and really didn't want to go to the store. This was really easy and of course had all ingredients on hand. I was not too impressed, but I did use an organic peanut butter with less sugar than normal and no hydrogenated oil, which might have made a difference had I used regular peanut butter. My kids did like it and I will make again if they request it. Maybe I will make them make it, it's so easy.

Garlic-Lemon Double Stuffed Chicken

These were good except I didn't taste much of the lemon flavor. I was cautious not too add too much cheese so I used less than called for and still tasted good using lowfat cheeses. My kids liked it, but my husband doesn't like his chicken stuffed, worrying about his chicken not being cooked through. So he is the only one who didn't like it. I served with rice and corn on the cob.

Classy Chicken

Unfortunately, we did not care for much for this one. Kind of flavorless. I followed the recipe exactly,except for adding more broth at the end because it all evaporated at the end of cooking. Not making again.

Six Can Chicken Tortilla Soup

This was awesome for being so easy. To cut back on sodium, I rinsed and drained the beans; used no salt can of corn and low sodium chicken broth. Also added some cumin. I also fried strips of corn tortilla instead of store bought tortilla chips. I did use the precooked southwest chicken like others have suggested. Topped with lite sourcream, avocado and cheese. Filling by itself.

Cola Pot Roast II

I thought this was sooo good, but I give it a four because my husband said it lacked some flavor. I use 3/4 of the brown gravy and 1/2 can of coke. It was not sweet at all which was great. I did make this in a crockpot, which is a lot easier than checking the oven every couple of hours. But maybe I will need to thicken the gravy adding salt and pepper to give it a little more flavor for hubby.

Lemon Mushroom Herb Chicken

Wow, this was awesome. Tastes gourmet, but quick and easy. I didn't do the exact recipe because I was missing some things, but it turned out great. I didn't have basil or capers and I forgot the paprika. Didn't add the lemon zest either. Frankly, it had the perfect amount of lemon flavor. I also only used 1/4 cup of butter, 1/2c. seemed too much and I used the healty request cream of mushroom to cut back on calories. I had a lot of flour mixture left over, as well. The sauce thickened perfectly. Next time I will make according to recipe to see if there is any difference in flavor. But even without a few ingredients it was still delicious.

Strawberry Oatmeal Breakfast Smoothie

My husband thought this was perfect. Other smoothies were not filling enough for him for breakfast and he would be hungry still. But he found this one to be filling enough to hold him over until lunch. It was also the right amount of sweetness. Next time I will try with 1/2 c. fat free yogurt and 1/2c. milk to cut back on calories.
