Grilled Chicken Thighs Tandoori

My DH was disappointed that this did not taste like tandoori chicken as he was craving some. I did bake at 400 degrees for 40 min. which cooked them through perfectly. It tasted okay, just not the tandoori he was hoping for.

Quinoa and Black Beans

Our first time using quinoa. It was good, but needed something more, like some lime juice for acidity. It was filling, we used it as a main dish. I would make this again as a side dish.

Rosemary Ranch Chicken Kabobs

4 for flavor, 3 for texture. These were dry after broiling. Used the Creamy Buttermilk Dressing from this site in place of ranch. Family liked this entree.

Creamy Buttermilk Dressing

We really enjoyed this dressing. Great for dipping raw veggies to snack on as well as dressing a salad. Plus there is no MSG or preservatives you normally get in the name brand dressings.

Asian Lettuce Wraps

DH says these taste 10x better than the chinese restaurant. Very delicious!! I did use ground chicken and topped with chopped nuts and the sauce recommended by another reviewer. I did not use pickled ginger and did not miss it. I don't know how much different this would have tasted with it though. This dish should be doubled for a main dish or if you want left overs.

This recipe is really good as long as you don't use all the salt as listed. 1 tsp. for marinade and salt to taste in sauce.

Slow-Cooker Chicken Tortilla Soup

We really liked this soup. It wasn't spicy for my children. I just put in two raw chicken breasts in the beginning of cooking and at the end shredded them and put them back in. They were perfectly cooked through. Thanks!

Tomato Enchilada Bake

Sorry to say, my family didn't like this one. We prefer the white cream sauce chicken enchiladas over this one. Need to also make sure to season the chicken. I boiled a whole chicken for this one, but didn't season it.

Amazing Italian Lemon Butter Chicken

This dish was delicious. I tried to use healthier ingredients, by using Smart Balance butter and half and half for the sauce. The sauce tasted by itself was overpowering with lemon, but when added to the chicken mixture, it blends in really well. I didn't ladle the sauce onto the pasta, just used what clinged to the meat mixture, so half the sauce was still in the pan when we were done eating and I didn't feel like we ate a ton of butter. The bacon really adds to the flavor and I didn't have capers, but love them so they would have been a great addition.

Eggplant Snack Sticks

We are not eggplant eaters, but I got one in my co-op farm box, so I needed to use it. My kids tried this, but didn't like it. I will have to try other eggplant recipes to see what we like. Although I think people who generally like eggplant would like this recipe.

Riblets and Sauce

The sauce was very flavorful. Almost a 5 star, but my family had a hard time eating the spareribs. Baby backs generally cost more, but will try the sauce with that. I did bake these at 350, covered for 1 hour. Didn't baste nor did I make extra sauce, it is a good idea to do it though. Grilling would have made it taste even better.

Country Fried Steak and Milk Gravy

Conceptually, this would be good, but I wasn't getting a flavorful result. Needs something more for crunch, maybe cornstarch. I used an organic shortening with non-hydrogenated oils, so it was slightly healthier.

Shrimp and Mushroom Linguini with Creamy Cheese Herb Sauce

This was pretty good. The sauce started to scare me because the cream cheese was not looking pretty until I added pasta water. I used the fat free cream cheese and it still turned out great. I added marsala wine, but I tasted the sauce before and after the wine and it was good both ways.

Sean's Falafel and Cucumber Sauce

Delicious!! I have had better sauce, but it still tasted good when tasted together with the falafel and some feta and lettuce in a pita. I pan fried mine and it does soak up a lot of oil. I'll try baking next time to see the difference in flavor. Edited:1/22/09= This time I used the food processor for the chickpeas, formed them into balls and did not flatten them. Deep fried them, and they did not get greasy at all, nor did they fall apart. Perfect!

Hot Artichoke and Spinach Dip II

This wasn't a favorite, but it was still good. Used sour cream instead of mayo, but everything else was the same. It had a thick consistency, not really creamy and gooey.
