Roasted Asparagus with Parmesan

Made as is except used olive oil (not the spray). My asparagus took a bit longer to cook to tender. I just kept checking so that it wouldn't get overcooked.

Broccoli Cheese Soup

Very easy and good. I did cut down on the chicken broth to around 45 oz. and also made a roux with the butter and flour like one of the other reviewers said. I added about a cup of shredded chicken (had on hand) but this would be just as good without.

Beef Nacho Casserole

Good flavor & very easy. I used 15oz. ground beef, 1/2c. sour cream, 1T miracle whip, 15.5 oz. can of corn & mexican cheese. The rest of the recipe I followed like stated. next time try a small can of mexi-corn and some black beans. Also try taco flavored chips. I crunched the chips in my hand (not finely). Next time keep the chips crunched to a 1/2 dollar size. Black olives on top would be good too.

Chicken Tortilla Soup I

Very Good flavor. I cooked my cubed chicken breast, garlic & onion in the olive oil until chicken was no longer pink & onion was cooked. Then added the chicken broth & spices & cooked for 10 min. I didn't have cilantrol so I added 1/2t cumin. I used all chicken broth (no water). After cooking for 10 min.I added the chilies, 15 oz Hominy, 15 oz canned corn, black beans. I served with Monterey Cheddar cheese, tostitos & sour cream. I also baked corn bread as a side.

Creamy White Chili

Very Good. Next time make a double batch so that we have leftovers! Made just as directed except I used 1 c. whipping cream (wanted to use up). I served shredded Mexican Blend Cheese & tortilla chips on top. Not that spicy.

Italian Sausage Soup II

1st time-Used Jimmy Dean Sweet Italian Sausage and macoroni (which I cooked ahead separately and added after soup was just about finished.) 2nd time-Used Family Foods bulk Italian Sausage & Orzo pasta (which I cooked ahead separately and added after soup was just about finished.) I liked the Jimmy Dean & the Orzo the best.

Rhubarb Strawberry Crunch

I made exactly as stated except that I baked the bottom crust for 15 min. While baking I cooked the water, vanilla, sugar, cornstarch until thick (added a couple of min. just to be sure) I then poured this on top of fruit in large bowl & stirred until all fruit was covered. I poured this directly over bottom of crust (didn't cool) put the crumb mixture over top & baked 45 min. or until fruit was soft (check with fork). I served with ice cream & it was a hit. I didn't think it was too sweet but I will decrease the water to 3/4c next time. I didn't serve until it was cooled & it was a bit runny. Definitely a keeper! I think I may try some blueberries along with the rhubarb & strawberries next time.
