Eggplant Parmesan II

Made exactly how stated & it turned out great. I did peel & sliced the eggplant & then sprinkled with salt to draw out any bitterness. Easy & delicious!

Salmon with Lemon and Dill

I used Chinook (King) salmon. It was fast and easy but the lemon juice was overpowering and took away from the salmon. I would cut back to 3-4 T. I prepared this just as instructed except like other reviewers I used fresh garlic that I minced and added the dill to the sauce.

Triangular Delights

Very simple & tasty. I made just as stated. Keep an eye on them because they definitely can go from golden to dark brown in a matter of a minute. I used 3-8&1/2 in. tortillas and it covered just perfectly.

Almost No Fat Banana Bread

I would rate between a 4-5star. Made with 1 whole egg, 1/3 c. no-sugar apple sauce, 3/4c. sugar, 1/4t. nutmeg, 1/4t. cinnamon, 1/2t. vanilla, 1/2t. almond flavoring. Next time I'd cut soda to 1/4t. & add nuts. If I'd had 3 bananas I would have used 3. Very flavorful, simple & delicious.

Quick and Easy Vegetable Soup

Easy & quick I made as written but instead of using canned vegtables I added frozen mixed vegetables & dried kale. Next time I won't put as much spice in it (I added about 2 tsp. and it was pretty hot). Also try adding some lima beans in it.

Made as directed except I heated saurkraut until warm. Don't rinse kraut just drain. It doesn't take that long to brown, watch so sandwich doesn't burn.

The Best Meatloaf I've Ever Made

I made just as instructed. My first thoughts after trying this "Not as good as the recipe off the Quaker Oats box", but I have to remind myself that that this is a different type of meatloaf. It has good flavor and makes a great cold meatloaf sandwich:) Next time I'll cut back the WOR sauce just a bit, and increase the tomato sauce that you put into the meat mixture by 1/8c. leaving the remaining sauce for topping oz.(the topping sauce is too much as instructed).)

Perfect Butternut Squash Muffins

Made with 3 cups of squash. Followed recipe as directed & made some with nuts, raisens & some left plain. Definitely better with additions. This is a great recipe to get creative with & use up squash. Suggested add-ins: dried fruit, vanilla or maple flavoring, coconut. Decrease ground cloves to 1/4t. increase pumpkin spice.

Amazing Muffin Cups

I would rate this a high 4. Very easy and delicious. I had a little problem getting the hashbrowns to come out but this didn't affect the taste. It was hard cleaning the pan so maybe I just need to try a better muffin pan. Made this as written.

Zesty Zucchini and Squash

Very good. I sauteed the diced onion & 2 cloves of garlic until soft & fragrant then added the squash & mild Rotel tomatoes sprinkled some pepper, garlic salt. Cooked for 20 min. Before serving I dotted with a little butter & some shredded cheddar cheese. I served it over wheat spaghetti with a side of garlic bread & fruit. So simple but so delicious!

I didn't have the red pepper sauce so I substituted cayene pepper. I had 4 chops so I halved the ingredients and it worked great. These are spicey.

Spanish Rice Bake

Very easy and delicious. I didn't have chili sauce so I used 1c of mild salsa & 1/2c of water. I also added cumen, chili powder & garlic powder to my hamburger when browning. I added a can of mexi-corn to the mixture and cooked it entirely on stove top because I didn't want to start oven & heat up my kitchen.

Elaine's Sweet and Tangy Loose Beef BBQ

I used a *4lb. pork roast which I cooked in crockpot with 1/2 c. water & a pkg. of Lipton Onion Soup Mix. I cooked until very tender and then removed from bone and removed fat. The next day I mixed ingredients except that I used half BBQ sauce/half ketchup and I cooked on low for 3-4 hours. Family really liked, very flavorful.*Halved ingredients since I used a smaller roast.

Roasted Asparagus with Parmesan

Made as is except used olive oil (not the spray). My asparagus took a bit longer to cook to tender. I just kept checking so that it wouldn't get overcooked.
