Ravishing Red Velvet Cake

Reviewed: May 22, 2008
This recipe was FABULOUS!! I had rave reviews. I did add the extra 1/2 cup of sugar, but other than that followed the recipe and it turned out wonderfully. I didn't sift the flour though, and it didn't seem to present a problem. The only other tip I have was that you HAVE to mix the 2nd part of ingredients in a separate bowl. I tried it out twice and the 1st time, I just added the vinegar, baking soda, ect to the already mixed ingredents and it started fizzing and popping like a science fair project. (I was trying to be quick and make less of a mess and wasn't thinking!) Anyway, it turned out good, but the 2nd time I made them they were even better! I took them to work and they were inhaled. They were very moist and the frosting recipe is a winner also, I will no longer buy store bought frosting!! Thanks for the great recipe, I am in IL, I am not sure why so many people had difficulties with this, it's AWESOME!!

Peanut Blossoms

Reviewed: Apr. 27, 2008
Mine didn't crack when I put the kiss on top, but were yummy just the same. I also put an upside down Reese's pieces (smaller one) and those were yummy also. They do melt more, so you may want to cool the cookies slightly before adding those. Very good though, these get gobbled up!

Mexican Whole Wheat Flour Tortillas

Reviewed: Apr. 27, 2008
THANK YOU!! I have been looking for a recipe that was close to my late grandmothers and this is it. Not exact, but the closest I have ever come!! She didn't measure anything, so it was difficult to find one. I do prefer the straight flour ones, I found the wheat ones to be good, but a little harder to work with. I have made several batches, and while the one I made with lard was yummier, I will continue to make them with the healthier oil. I do add extra water though, when I followed the recipe exact, they were thicker and tougher. The main thing I noticed was that the dough appeared yellow (from the oil) when I didn't have enough water. It should look the same color as the flour if you have enough. The dough should roll very thin very easily, and be stretchy as you remove it from the counter and put it in the pan. Getting the right amount of flour to roll it in is tricky too, it will take some practice. Too much and the excess flour will burn on your pan, and you will have black specks all over every tortilla. Very good though, I get RAVE reviews and they disappear fast! I prefer to double it, but then I get my husband to do the cooking part, that is my least favorite part! They freeze well too. I doubled one to have some for next time, but we flew through the other 1/2 so quick that they only lasted 3 days in the freezer, but were just as yummy. Have patience if you have never done them before, it will take practice to roll them out just right. Even though these were my 1st

Chocolate Chip Muffins

Reviewed: Apr. 27, 2008
My sons love this!! I did make them with 1 cup milk and split the sugar to 1/4 white and 1/4 brown and added 1 tsp vanilla. I cut the baking powder to 1 1/2 tsp, and mine didn't rise up that much. I would rather add less though, in other recipes, when I use that much baking powder, you can taste it, and it is not a pleasant taste. These are delicious, but mine didn't brown at the top, so don't keep them in that long or they will burn. I tried both regular sized muffins and mini muffins. The mini muffins cooked in only 8 mins. This will definitely become a staple in my house!! Thank you!!

Delilah's Frosted Cut-Out Sugar Cookies

Reviewed: Jul. 12, 2007
I love this recipe, I have even made them the "lazy" way without rolling them out and cutting with cookie cutters. I just roll them into balls and flatten the with a flat bottom cup dipped in flour or sugar so they don't stick to the cup. If you are being REALLY lazy, you don't even need to flatten them out. If you cook them as the ball, they sort of melt down and cook as a mound. Then I just zigzag the icing over the top. Goes MUCH quicker and they are just as tasty!! All the yumminess with a fraction of the work involved!!!

Gingerbread Men

Reviewed: Jul. 12, 2007
I get rave reviews on this, I have made it several times, and I have tried both the instant and the cook and serve, they both work. I find they turn out slightly chewier with the cook and serve, but turn out delicious both ways. Very easy!!

Almond Pound Cake

Reviewed: Jun. 5, 2007
I just made it as a pound cake and in a loaf pan, it was very good. The first time, it ran over and was a little too buttery, but the 2nd time it made 2 loaves and was perfect. I will definitely be making this again!

Crazy Crust Pizza Dough

Reviewed: Jun. 19, 2001
This is a great recipe that uses basic ingredients (it was the only one I found that did not call for yeast). It is very quick and easy to prepare and has a great flavor. I have already passed it onto several friends and they love it also.
