My Chicken Pho Recipe

Great simple-to-prepare recipe! I didn't have lemongrass, but I followed the recommendations of other reviewers and added star anise and a cinnamon stick while letting the broth mixture simmer for about 30 minutes instead of 10. Also added sliced white mushrooms and fresh basil with the veggies. Seasoned it with a bit of sriracha sauce before digging in. I LOVE pho but I'm trying to eat out less. This is a wonderful way to get my fix.

Baked Kale Chips

Couldn't be easier to make and a delicious snacky godsend for dieters like me. Kale is one of the most nutritious veggies there is, inexpensive, and this recipe makes the most of it. It's very versatile, as I imagine you could play with a variety of spices and seasonings to your taste. I prefer these with a very small sprinkling of salt and a sprinkling of balsamic vinegar before popping the tray into the oven. These will likely become a regular feature in our household. Even my non-dieting junk food loving better half loves them! I find that the trick to cooking them just right is to bake them for about 10 minutes, check to make sure that their color is turning just a little, and then cook for another 3 minutes. I have had better (and lower fat) results with using cooking spray instead of regular olive oil.

Spinach and Feta Turkey Burgers

Turned out beautifully! I followed another reviewer's example and added lemon juice (just a small amount, since this mixture tends to remain pretty soft and hard to keep held together once in patty form), a healthy amount of paprika, extra garlic, and basil. I made them a couple of hours ahead of when I meant to cook them, so I put them on parchment paper and stuck them in the freezer until cooking time. It helped them firm up and be more easily handled. Don't have a working grill presently, so I just cooked these on a griddle with a bit of olive oil. They only took about 4 minutes to cook on each side. My sweetie loved them when he came home from work and noted that the mixture of flavors was perfect and they were moist and tender. Served with a mix of cucumbers, onions, and red bell peppers with light balsamic dressing on the side.
