Chipotle Dry Rub

Try adding a little cinnamon (1 or 2 tsp.) depending on your taste. It adds an incredible complexity to the flavor, esp. on ribs!

Avocado Egg Salad

This is a recipe that I have put on toast for quite some time. Add a little salt & pepper and it is delicious. I normally whip or mush the avacodo and the egg together in lieu of cubing the avacado to allow it to spread better.

Bacon Wrapped Water Chestnuts II

These were the smash hit at our recent Super Bowl party. I would not hesitate to let these go a bit longer in the oven at both ends. I actually baked mine with the sauce on for about 25 minutes to get a beautiful caramelized finish. Just keep an eye on yours and pull them out when you are happy with the crispiness of the bacon and the finish of the sauce.

Slow Cooker Texas Pulled Pork

This was excellent and was a big hit at the recent Super Bowl party! I removed the liquid from the crock pot, however, before putting the meat back in. Using a ladle, I then began to add back just enough liquid to keep the pork moist. I also tried to save as much of the chopped onion back in to the meat as well. I then added another cup of barbeque sauce for a little more bbq flavor. Having too much liquid will ruin the pulled pork so it is necessary to add back only enough liquid to keep the port moist!

Maple Bacon Pancake

Excellent!! I added a little vanilla as well. Try adding a 1/4 cup of chopped sweet onion for a twist. Try it....you'll love it! Saute' the onions until translucent first then add to the mix.

Sun-Dried Tomato and Blue Cheese Burgers

Awesome burger! Add or diminish the sun-dried tomatoes based on your tastes. This burger is bold enough to stand up to a Pinot Noir if you so choose. I mix ground chuck and ground sirloin (50/50) to achieve the perfect amount of taste and sizzle when grilling this or any burger.

Braised Balsamic Chicken

Definately a great recipe. Has a bit of tang from the balsamic. I carmelized the onions first and halved the balsamic and had excellent flavor.
