Slow Cooker Green Chile Stew

Reviewed: Oct. 26, 2013
Made this with a left over smoked pork tenderloin we had. I used gold Yukon potatoes instead of sweet potatoes and used only 1 can of diced chilies and added 1.5 cups of chicken broth. Cooked it on the stove for about 20 minutes. It was OUTSTANDING!!

Black Bean and Rice Enchiladas

Reviewed: Oct. 21, 2013
We really liked this! I made it exactly as written with the exception that I added a can of enchilada sauce to the top prior to putting them in the oven. It made 1 9x13 pan plus about 6 more in another pan! I put the left overs in the freezer for another day. Two thumbs up from my family.

Orzo with Parmesan and Basil

Reviewed: Sep. 2, 2013
We LOVE this recipe. I usually add onion and saute with the orzo before adding the broth. We also add more basil than called for and less cheese but add it back after it's cooked.

Absolutely fantastic!! I have made these on chiabatta rolls, english muffins, bagels, etc. I broil the bread with the mozzarella cheese before adding zucchini mixture. I also add olives and sometimes mushrooms to the mixture and my family LOVES them!!

Modified our pizza a bit. Added feta cheese, chopped fresh basil and spinach. Used about 1/4 of the cheese it called for and topped it off with some sliced olives and some grated Parmesan cheese. It was outstanding! Will definitely be making this one again!

Quinoa with Sweet Potato and Mushrooms

Reviewed: May 5, 2011
Seems this is either a love it or hate it recipe and I'm going to have to agree with others....it's missing something but I can't quite put my finger on it. As written this MIGHT serve 3 people, definately not 4. It was nice to have a new Quinoa recipe to try but I don't think I'll fixing this again anytime soon. P.S. We are vegetarians who LOVE all the ingredients in this recipe...just not in this combination.

Asparagus, Chicken, and Pecan Pasta

Reviewed: Apr. 26, 2011
This was a good recipe but I made some modifications. I added about a tablespoon of red pepper flakes and 8oz sliced portobello mushrooms. Next time I'll wait and sprinkle the cheese after serving. It all stuck to the spoon and the bottom of the pan. What a mess! BUT! It was a hit and everyone liked it. I too added another 1/2 cup broth...I wanted it more saucy.

Vegetarian Tortilla Stew

The green enchilada sauce I got was "mild" which made this dish SOOOO mild. We (the parents) ended up adding hot sauce to ours which helped to spice it up and even the kids gobbled theirs up :)

Garlic Red Potatoes

Diced the potatoes for faster cooking, added 2TBS Italian Seasoning, used lemon juice concentrate and shook everything up in a ziploc. I omitted the cheese (mainly because I forgot) and they were fantastic!

Stuffed Shells III

Reviewed: Mar. 21, 2011
Im into quick and easy meals and this one certainly fit the bill :) I've never stuffed shells before so I took the advice of others and used a gallon size zip lock. I put everything in the baggie and mixed it in there to cut down on the clean up time :) I used 1 tsp of salt and added 1 TBS Italian seasoning. I sauteed fresh mushrooms and fresh spinach in a little garlic and butter. Stuffed my shells (took 1 9x13 plus 1 1/2 that size), then spread the mushrooms and spinach over the top. Next, again to save on clean up, I didn't mix the cheese in with the sauce, instead I sprinkled a bit over the shells, mushrooms and spinach then spooned the sauce over the top (I used a 45oz jar of Prego Traditional). I took what cheese I had left and sprinkled it on top of that. They are now baking and I can't wait for my family to try it! I know they will love em!!! Thank you!
