Paleo One Minute Muffin

Artichoke Spinach Lasagna

We really enjoyed this recipe. I followed the recipe exactly except I didnt precook my noodles and I added 2 cups of ricotta cheese to the mozzarella cheese. Just before placing in the oven, I added 3/4 cup of water around the edges (for the noodles) and it turned out perfectly!! Thank you!

Blue Bacon Stuffed Mushrooms

This tastes JUST like the blue cheese topper you can get at Outback on top of your steak!! We LOVED this! I made it just as instructed, blender and all. Will definitely be making this again soon!!

Slow Cooker Green Chile Stew

Made this with a left over smoked pork tenderloin we had. I used gold Yukon potatoes instead of sweet potatoes and used only 1 can of diced chilies and added 1.5 cups of chicken broth. Cooked it on the stove for about 20 minutes. It was OUTSTANDING!!

Black Bean and Rice Enchiladas

We really liked this! I made it exactly as written with the exception that I added a can of enchilada sauce to the top prior to putting them in the oven. It made 1 9x13 pan plus about 6 more in another pan! I put the left overs in the freezer for another day. Two thumbs up from my family.

Orzo with Parmesan and Basil

We LOVE this recipe. I usually add onion and saute with the orzo before adding the broth. We also add more basil than called for and less cheese but add it back after it's cooked.

Veggie Pot Pie

VERY VERY GOOD!! I added 1 cup broccoli as well as 1 yellow squash, otherwise, followed the recipe exactly! I made it in a 9x11 pan and everyone loved it. Definitely will make this one again!!

Yellow Squash Casserole

used bread crumbs instead of crackers and heavy cream instead of milk (out of milk) and the kids LOVED it!! I'm going to make it again this week and use 1/2 zucchini and 1/2 yellow squash. YUMMY!

Fabulous Zucchini Grinders

Absolutely fantastic!! I have made these on chiabatta rolls, english muffins, bagels, etc. I broil the bread with the mozzarella cheese before adding zucchini mixture. I also add olives and sometimes mushrooms to the mixture and my family LOVES them!!

Garlic and Artichoke Pizza

Modified our pizza a bit. Added feta cheese, chopped fresh basil and spinach. Used about 1/4 of the cheese it called for and topped it off with some sliced olives and some grated Parmesan cheese. It was outstanding! Will definitely be making this one again!

Quinoa with Sweet Potato and Mushrooms

Seems this is either a love it or hate it recipe and I'm going to have to agree with others....it's missing something but I can't quite put my finger on it. As written this MIGHT serve 3 people, definately not 4. It was nice to have a new Quinoa recipe to try but I don't think I'll fixing this again anytime soon. P.S. We are vegetarians who LOVE all the ingredients in this recipe...just not in this combination.

Asparagus, Chicken, and Pecan Pasta

This was a good recipe but I made some modifications. I added about a tablespoon of red pepper flakes and 8oz sliced portobello mushrooms. Next time I'll wait and sprinkle the cheese after serving. It all stuck to the spoon and the bottom of the pan. What a mess! BUT! It was a hit and everyone liked it. I too added another 1/2 cup broth...I wanted it more saucy.
