Quinoa Porridge

This was really good and an interesting new way to use quinoa but some changes were needed in the cooking method. I did not add the water and just used 1.5 cups soy milk since that seemed like way too much liquid from my previous experiences with quinoa (figured I could add the water later if it was needed- it wasn't). I also covered the pan while it was simmering to help with water absorption. After the quinoa was cooked through I took off the lid and simmered until it reached the consistency I wanted. I topped with a bit more brown sugar and some walnuts. This made a delicious breakfast for two (it was not three servings for us) and I think we both could have eaten a bit more.

Pumpkin Pasta

This was a great way to use up extra pumpkin and make a low-cost meal with things I generally have in my pantry. After reading reviews I decided to add some caramelized onions to this. I substituted veggie broth for the chicken broth, plain soymilk for the milk, cheddar for parmesan, and skipped the margarine and onion powder. Some reviewers have mentioned that this was too soupy. I cooked this down for a while and also added extra cheese which seemed to combat that issue. I will certainly make this again and would love to do so when I have some sage in the house to add to the sauce. It was almost like inside out pumpkin ravioli which is one of my favorite dishes when we go out to eat. I'm so glad I can get something close to it at home without a huge amount of work.

Sesame Noodle Salad

I used soba noodles instead of the angel hair and left out the hot chili oil (didn't have any) and the green onion since I was serving this to a friend allergic to onions. I also added broccoli. This was incredible. The flavor combination in the dressing was not something I would have thought of but it was great.

Oatmeal Waffles

These were great! I am so glad to find a tasty healthy waffle recipe. I did add a tablespoon of vital wheat gluten as other reviewers suggested and was pleased with the texture.

Ginger Bars

These are really good. I found them to have chewy and brownie-like texture. I did have to bake a bit longer (more like 40 minutes) but did not wait until my toothpick came out dry- just clean.

Whole Wheat Chocolate Banana Bread

You certainly could tell these were healthy/whole wheat but they were also moist, delicious, and filling. I followed Meghan's suggestion of adding a bit more oil (and using olive oil) since I was planning to freeze. I also added some chocolate chips and walnuts. Great for a healthier lunch box treat.

Strawberry Spinach Salad II

Loved the flavor combination of the balsamic, spinach and strawberries. After reading reviews I decided to taste the dressing before adding sugar and thought it was great without any sugar. I also increased the proportion of sesame oil since that is a flavor we love.

Trishie's "Pirates of the Caribbean" Grilled Pineapple

What a great idea! This was amazing! I made it last night with two changes. I used Malibu Black instead of a combination of Captain Morgan's and Malibu so that I only had to buy one thing after being told by a vendor that it should taste pretty similar to the ratio given. I also cut the pineapple into rings as I was afraid of the smaller pieces falling through the grill.

Avocado Peanut Butter Brownies (Vegan)

These were OK the day that they were made but seemed really greasy and crumbly. However, they were incredible after refrigeration. Great flavor and texture after being in the fridge. Really rich and fudgy.

Whole Wheat Apple Muffins

This is a great moist whole wheat muffin. I considered other reviews and used 1 whole egg in place of the egg whites for convenience and also used 1/4 cup of sugar and about 1/8 cup honey. Next time I will add nuts and maybe a bit more honey as well as sub applesauce for some of the oil to get it a bit healthier.

Almond Brownie Bread Pudding

I doubled the recipe and skipped the almonds. This was incredibly delicious and easy to make. I only baked for about 40 minutes and it seemed cooked though but not dry enough for a knife to come out clean (personal bread pudding preference). The only thing I might change would be to use warm milk since the chocolate got clumpy and stuck to the whisk when the cold milk was added.

Egg-Free Low-Fat Oatmeal Cookies

Really tasty. The texture was not what I was expecting from a cookie. But once I got used to the texture I thought they were great. I made these with chocolate chips for my mom (allergic to eggs and dairy) when she came to visit and the rest of the family enjoyed them as well.

Cauliflower and Tofu Masala

This was delicious. The only thing I changed was that after reading the reviews I decided to start with one pepper which ended up being perfect for our tastes. I also left out the garlic due to a food insensitivity. I loved this and am looking forward to making it again.

Mango Gazpacho

Wow. This was even better than I was anticipating. I did make a couple of alterations for convenience and taste. I used a bit more than two cups of mango to finish up 2 mangoes and to make it thicker. I sauteed the garlic in the olive oil as I am not comfortable with raw garlic and skipped the onion since I was serving this to someone with an onion allergy. I'm pretty sure I forgot the lime juice and I think that would have added to it but it was wonderful anyway. I was glad to have help in the kitchen with all of the chopping. This was a bit of work to put together but well worth it.

One Bowl Brownies

Delicious and easy! Great texture and flavor. I had some trouble getting them out of the pan so I got to snag some crumbs before serving them. I will plan to use foil or parchment paper to line the pan next time.

Coconut-Curry Lentil Stew Served over Quinoa

This was really good and very filling. I did not have coconut oil and just used olive oil. I found that it needed about double the amount of molasses called for to cut the bitter flavor. I will definitely be making this again.

Wheat Bread with Flax Seed

This was pretty good and I love the use of flax. However, I had to add a bunch of extra flour to get it to the right consistency. I am not sure how much extra I put in as I just added it until the ball of dough in the machine seemed right.
