Sweet Potato, Carrot, Apple, and Red Lentil Soup

This was great. Loved the flavor combination. I wish I had used a larger apple or two small apples- next time. I used olive oil instead of butter due to personal preference. I topped with goat cheese as I did not have plain yogurt in the house.

Pumpkin Pancakes

These were delicious. I was worried that they were way too thick looking at the batter but followed reviewers' directions to suppress your instinct to thin the batter and to instead spread it with a spoon. This worked great and tasted wonderful. Thank you!

Egg-Free Low-Fat Oatmeal Cookies

Really tasty. The texture was not what I was expecting from a cookie. But once I got used to the texture I thought they were great. I made these with chocolate chips for my mom (allergic to eggs and dairy) when she came to visit and the rest of the family enjoyed them as well.

Whole Wheat and Honey Pizza Dough

This was good. Tasted good but you could very much tell it was whole wheat. Made this the night before in the bread machine, stored half in the fridge for the next day and half in the freezer for later in the week. I think I pre-baked it too long the first night and it was pretty tough but didn't bake as long the next time and it was much better.

After reading the reviews, I decided to reduce the butter to 3/4 cup and I increased the PB (not sure how much though). This was great! A small portion went a long way.

Peanut Butter Pie I

Delicious! I loved the texture and the cream cheese flavor was incredible with the PB and chocolate. Reduced sugar to 3/4 cup and increased whipping cream to 1 1/2 cups. This fits well in my 9.5 inch pie pan.

Curried Quinoa Salad with Mango

Thought this was great the second time around when I made some adjustments. There was too much green onion for my taste as the recipe is written. I have also made this with yellow onions and enjoyed that as well. A few walnut pieces sprinkled in add texture, flavor, and protein.

Strawberry Spinach Salad II

Loved the flavor combination of the balsamic, spinach and strawberries. After reading reviews I decided to taste the dressing before adding sugar and thought it was great without any sugar. I also increased the proportion of sesame oil since that is a flavor we love.

Oatmeal and Wheat Flour Blueberry Pancakes

I hadn't had much experience with pancakes from scratch before this. I love the use of whole grains in these pancakes. The taste and texture are great (though I do increase the liquid due to personal tastes). These work great using all whole wheat flour instead of part all purpose flour as well. Thank you for a new favorite.

Tasty Lentil Tacos

This taco filling has become an instant favorite in our house. I use vegetable broth to make it vegetarian and leave out the garlic due to an allergy. This reminds me of the taco meat my mom made (from an envelope) when I was young so it is not only delicious and easy to make but also comforting.
