Vegetarian Korma

This was pretty good. I made a lot of changes based on what I had in the house and the preferences of those I was serving. I used a can of coconut milk and a couple of medium fresh tomatoes instead of the cream and tomato sauce. Left out the jalapeno, cashews, peas, and peppers but added a can of chickpeas and some green beans. Many reviewers mentioned that their potatoes took longer to cook but I found that red potatoes (cut into small cubes) cooked pretty quickly.

Apple Squares

I doubled the recipe (except for the topping) using about 2 cups of apples. Baked in a 9x13 pan for 40 minutes. Very tasty.

Pecan Pie V

This recipe is wonderful. I'll never use my old corn syrup recipe again. I did use 1.5 cups of pecans plus some arranged nicely on top and used lower baking temps as recommended by other reviewers. I think next time I'll skip the white sugar as this was a little too sweet for my taste.

Butternut Squash Bake

I used feta cheese instead of blue cheese after reading reviews that suggest it (since I don't like blue cheese). I also used home made bread crumbs and seasoning and didn't measure but it was more bread crumbs than suggested and I think that it was needed.

Vegan Red Lentil Soup

This was pretty good. I did find it to be a little boring and added some extra curry powder and a big spoonful of natural peanut butter which seemed to bring the flavors together better. With those changes I loved it.

Apple Oatmeal Crisp

While tasty, I think that I will make some revisions to this recipe next time I try it. The crumb mixture was great but I wished for a higher apple to crumb ratio and will use a deeper dish and more apples next time (I used about 4 cups). I will probably also skip the white sugar as this was too sweet for me.

Avocado Peanut Butter Brownies (Vegan)

These were OK the day that they were made but seemed really greasy and crumbly. However, they were incredible after refrigeration. Great flavor and texture after being in the fridge. Really rich and fudgy.

This was great. I doubled it and got 12 burgers. I also baked the burgers at 400 for 20 minutes rather than frying. I might kick up the spice a bit next time.

Cauliflower and Tofu Masala

This was delicious. The only thing I changed was that after reading the reviews I decided to start with one pepper which ended up being perfect for our tastes. I also left out the garlic due to a food insensitivity. I loved this and am looking forward to making it again.

Black Bean and Artichoke Burritos

This was a really good jumping off point. I did as many reviews suggested and added some seasonings. I also doubled most of the recipe and tripled the beans since many reviews stated that the recipe did not yield 8 servings and it didn't look like enough beans for our tastes.

Easy Whole Wheat Peanut Butter Cookies

Delicious but the dough is difficult to work with. Next time I will try refrigerating it for a while before rolling into balls and baking. I did try adding some oatmeal as other reviewers suggested since I needed them pretty quickly. This did make the dough easier to work with but I wish the cookies hadn't turned out so dry.

High Fiber Blueberry Muffins

These came out perfectly! I was thrilled to find this modification for even healthier blueberry muffins. They were delicious fresh out of the oven and once cooled. I followed the recipe exactly as specified except for adding some sliced almonds on top of some muffins. That was pretty good but I think next time I might put some nuts in the muffins.
