Picante Chicken

For only using two ingredients, this dish was pretty good! :) I served it with some roasted brussel sprouts. Sooo good!

Curried Coconut Chicken

This was absolutely delicious! I used 1/2 a large shallot instead of an onion (didn't have one) and I used a little more oil in the beginning cause the curry oil became too thick. All in all it was soooo good and it made enough leftovers for 5 days! Win! :) Also, the only thing I had to do different was mix a little cornstarch and water and add that to the sauce to thicken it a little. I can't wait to make this again.

Hot Peanut Sauce

I'm giving this four stars because it was really good....however...like some other reviewers, I guess I used too many ounces of rice noodles (I think I only used 5 ounces or so) and there just wasn't enough peanut sauce to cover everything, so instead of a saucy dish, it was more gritty. I'll make this again but with less noodles.

No Bake Chocolate Oatmeal Cookies

As someone who is lactose intolerant, I was very excited to try these....until I took a bite. Yeow! Something (vanilla? maple syrup?) had a VERY strong and bitter taste. Now, I love dark chocolate. The darker the better. And i love peanut butter. And maple syrup, etc. So I don't know what went wrong with these, but they don't taste very good at all :(

Creamy Vegan Hot Cocoa

As a person who cannot have dairy, this was quite a find.....and a delicious one at that! The combination of the vanilla and coconut is a perfect blend. Slighty sweet, but a great twist on traditional hot chocolate!

Ghirardelli® Classic White Chocolate Creme Brulee

Hands down, one of the best Creme Brulee recipes I've ever had. This entire batch was gone within 24 hours, devoured by my parents and I. It's rich, creamy, smooth, and absolutely delicious. I can't wait to make this again. Yumyum!

Tofu Parmigiana

Yum! I didn't have fresh garlic on hand, so I used garlic powder, and I also didn't have tomato sauce on hand so I used spaghetti sauce and it still turned out delicious! I'm eating leftovers at my desk right now :) Delicious!!!

Vegan Cupcakes

These are AMAZING. I can't get enough! This recipe was so easy to make and the cupcakes are wonderful. I didn't even frost them, I was so impatient to try one :) The frosting suggested does sound good though - I'll try that next time. Wouldn't change a thing about these. YUM YUM YUM!

Simple Scones

Yummmmmmy! I made the cranberry-orange scones last night as well as the chocolate-chip scones. I've never made scones and these were simple and easy to make. I'm not really sure why people think its a lot of work to make them - I don't have a food processor and mine came out just fine. NOTE: I suggest you use a "light-colored" baking sheet to bake these on. I used a dark-colored sheet the first batch and the bottoms came out dark. The next batch I used a light bottom baking sheet and they were perfect!

Oven Omelet

Very tasty! I'd never made anything like this before, and was wary of using all those eggs. It came out perfectly! Next time, to cut back on fat/calories/cholestorol, I will probably use 4 egg whites and 4 eggs. :) Otherwise, no changes needed! Yummy and even good as leftovers!

Decadent Raspberry Brownies

These are excellent! I made them for Valentine's Day and they were a huge hit! The combination of the unsweetened chocolate in the brownie and the semi-sweet chocolate in the frosting is a perfect combo, especially with the raspberry jam. I would definately make these again!

Potato Chowder Soup I

I'll admit, this was pretty good. After I read the other reviews, I also cooked the potatoes, carrots and celery in chicken broth. Yummy! I think I might have slightly scalded the flour mixture, but thats my own fault. I'll try and be more careful next time. I also added some pepper to the soup. Mmmm.

Iced Pumpkin Cookies

One word: AMAZING! I iced half the batch, and left the rest plain with no icing. Honestly,I could have it either way! I've never made pumpkin cookies before and when I saw the "batter", I was a little skeptical. It didn't look like it would be cookie-shaped at all! But, needless to say, after 14 mins in the oven, they came out perfectly moist and chewy. YUM! perfect for fall.
