Joey's Peanut Butter Cookies

dense, and very peanut buttery. had to cook for almost 15 minutes in my oven. but great flavor!!!

good sauce, didnt use the anchiove and only one tsp honey. also sauteed some onion and carrot in oil, then added spices to toast, then can of crushed tomatoes and some chicken broth to replace water. used fresh basil, thyme and rosemary.

To Die For Blueberry Muffins

the batter was AMAZING - muffins came out beautiful - filled each a little more then 2/3 in a 12-muffin tray. few changes - and i mean very few - added 3 tsp vanilla (i LOVE it) and also a 1/2 c. chopped walnuts to batter. It was thick and DELICIOUS! used about half heavy cream and half milk - didnt have buttermilk. for the topping i replaced with brown sugar and also halved the flour and added half rolled oats for a streusel-like crispiness. WONDERFUL - my boyfriend and brother ate all 12 in a week everyday for breakfast!!! next time will add chocolate chips i think - and maybe raspberries ;) Thanks!!!

Double Tomato Bruschetta

Great recipe for Bruschetta - but having just come back from living in Tuscany for a few months I wanted to make mine a bit more traditional. Definately use sundried tomatoes packing in oil, tates way better. also double garlic and reduce the oil a bit (because i toast the crostini with oil on it before adding bruschetta you get the extra oil taste) and use HIGH QUALITY olive oil!!! Also i added a dash of dried oregano (not too much) and a little extra fresh basil from my garden. The traditional way is not hot at all, and the cheese is not melted, so i used a ball of fresh ovaline mozzerella i cute into small chunks and also a dash or parmesan. GREAT and DELICIOUS!

Sugared Black Raspberry Tea Cookies

I made a big batch of these for mothers day to bring to my family luncheon - and my family was thrilled! they didnt even know i could cook! ;) i used 1/3 C. unsweetended Cocoa instead of chocolate chips to give the whole cookie a chocolate flavor and used a cork to make the holes, as per other suggestion. i also used a ziploc as icing bag to fill holes with my favorite boisenberry jam! GREAT!

Brown Sugar Meatloaf

i have never made meatloaf before, but i decided to try this recipe with the garlic mashed red potatos i also found on the site. AMAZING. I did use a few reviewer recommendations - added bread crumbs instead of saltines and i also used a loaf pan and layered the meat mixture with the ketchup and sugar mixture, in a napolean style. it looked great and tasted even better! also loved the addition of celery and used minced onion instead of the soup mix or powder. GREAT! keeping in my "personal" file :)

Broiled Tilapia Parmesan

AMAZING dish - turned out wonderfully. listened to the last reviewer and added paprika, garlic and breadcrumbs and left lemon juice in. it was great! next time, and yes i will make again soon, i think i might add some tomato slices under the topping as well.

Easiest Peanut Butter Fudge

great, fast and easy. i didnt even measure out exactly - just eyeballed the ammounts and it came out perfect!!! my dad, the fudge expert, LOVED it. the trick is CONFECTIONERS sugar, if you use regular crystal sugar, it may not harden. i want to find ideas to spice this up - maybe chocolate or almonds! yum!

Grilled Mahi Mahi with Roasted Pepper Sauce and Cilantro Pesto

the red pepper sauce came out great. dont have an outdoor grill so i pan seared the fish in the seasoning and it came out great too. used others recommendations, next time i think i might use store bought pesto.

Deep-Dish Blackberry Pie

I must admit, at first I was skeptical about the limited ingredients and just throwing whole blackberries in a pan with sugar and covering them with a crust - hommeade with 5 or less ingrediaents! i dont even have a roller or cuisinart - so i thought i was done for. BUT THIS TURNED OUT MAGICAL! tastes homemade, looks beautiful and i cooked it for 40 minutes and VOILA! a real pie :) WONDERFUL! next time i might add a little vanilla extract, and eat a la mode :)
