Stuffed Peppers with Turkey and Vegetables
This is a great, healthy dish. To make it even more delicious, use half a pound of ground turkey and half a pound of turkey sausage. You can also top it with a little parmesan. Really hits the italian "pasta" craving without having any pasta.

Homemade Black Bean Veggie Burgers
Let me qualify this review by first saying that I LOVE real, beef hamburgers. hopefully that will explain why i sound so harsh. i was driven to this recipe by the cheapness of black beans and am trying to find a way to eat them that doesn't taste like eating cardboard. lentils and chickpeas i can do... but beans sort of elude me. For me the word 'burger' has a powerful association with delicious, warm beef juices dripping down your chin, and also a sense of pleasure from the post-consumption mini-coma. it isnt really fair to ask any sort of burger 'replacement' to compete with that. i tried calling them 'patties' or something else w/o the associative power of the word 'burger', but i fear it was too late. on a more rational note- i followed all the suggestions about how to make them stay together to no avail. of the 9 i made, i did not have 1 come out as a solid patty. I had more bean 'crumbles'. I also found them all to be quite dry bland (my kingdom for some beef juices!), and had to add lots of pico de gallo and hot sauce to get them down the gullet. my roommate was less condemning. so if you are into the super-healthy thing and aren't bothered by blandness... this may not be so bad. if you are a burger lover, this will be disappointing.

Greek Pasta Salad with Shrimp, Tomatoes, Zucchini, Peppers, and Feta
This salad is awesome and does not even need the dressing. I use a 3 color pasta for extra flavor/color.
