Slow Cooker Latin Chicken

lOVE this. ok we used trader joe cowboy bean and corn salsa and it was HOT! Bobby wanted it milder:) I think recipe is good or bad depending on salsa - so I must experiment to find the right salsa for this. This is one chicken dinner I actually LOVE! MUST cook with rice! I love Bobby:)

Chicken Stir-Fry

followed this recipe exactly and we both loved every bit of it! This is the only stir fry recipe for us from now on:) It's Monday after 2 weeks of Christmas break and it's a snow day! Tomorrow too! Subzero temps! love them!

Bean Soup With Kale

we both loved this soup! sooooo yummy! I changed this a LOT. 1) used a blend of dried beans that I bought from costco (soak night before, etc), 2) sauteed some onion, garlic, carrots...added the chopped up kale ...and more olive oil 3) also sauteed 2 red sweet peppers 4) when kale was wilted, added veg broth and beans (and blended a cup plus of beans and bean broth). add herbs de provence and parmesan cheese rind. served with grated parm cheese.

BEST soup ever, Honestly! ok, I used only about 1 cup tom sauce. Added lots of fresh spinach - at least 3 cups (cut it up a bit), lots of celery,lots of carrots, zucchini is a must. soooooo good!

Balsamic Chicken

very good, easy. I had whole chicken breasts in the freezer at 4:30 and dinner at 6:00. just defrosted the chicken, put ingredients in roaster (white one), let that heat up a tad, put chicken in at 350- 400. baste periodically

Fabulous Beef Tenderloin

soooooo good! bought 4.5 lb at Costco for $75 for Christmas 2010...too much for 8 people. buy less next time. also - use low sodium soy sauce b/c this was a bit too salty. definitely put the marinade in a gravy bowl so people can add to their plate - very good.
