Slow Cooker Barbequed Pork for Sandwiches

I love this basic recipes I added to the mix beef stock, 2 bay leaves, some pepper corn and about ¼ cup of beer. I don't really care for off the shelf BBQ sauce. So I made my own In a sauce pan I add ¼ cup balsamic vinegar ¼ cup white mind vinegar ¼ white distilled vinegar 2 table spoons of malted vinegar ¼ cup beer 3 table spoons Worcestershire sauce 4 dashes liquid smoke 1 cup catsup ¼ cup cherry juice 1 table spoon hot sauce ½ table spoon ground mustard Dash of cayenne ½ cup brown sugar ¼ cup honey 4 table spoons chopped onions 1 clove garlic 4 slices of diced bacon And cook it for about an hour on low heat before poring over the BBQ pork As the mix became thicker I added a bit of the liquid from the slow cooker. As a side I made home made coleslaw.

Traditional Mashed Potatoes

This recipe is so easy and a perfect base, I use heavy cream in place of the milk (during the holidays) add a spoon full of sour cream for that extra zing. I put my potatoes through a potato ricer then fold in the room temp cream and butter, it make the perfect textured potatoes. I also save some of that starchy water used to boil the potato's for making gravy.

Wiener Schnitzel

This was the first time that I have tried to make wiener schnitzel and it tasted like any German restaurant that I have been to. I used panko for the first time to replace the bread crumbs, and it turned out fantastic! I will definitely make this again.

Goulash Supreme

I love this Goulash recipe, its easy and quick and is perfect for a rainy day. I ran out of chilli powder so I replaced it with taco seasoning. I also added a few table spoons of chicken stock instead of water and as other reviewers had suggested I prepared the pasta (I used egg noodles) separately. I also add a dollop of sour cream to the top of the dish right before serving, which adds a wonderful flavor. This was thick and delicious and I will definitely make it again and again.

Harvest Salad

This was so good ,even my picky husband who hates vegetables loved it. I made a few adjustments I added 1/2 baby spinach and half spring mix. I used a no sugar strawberry jam (that's all I had) and a red wine vinaigrette. It was really good, I'll definitely make this again and again.

Fresh Broccoli Salad

For BBQ's our family usually make a plain salad and no one ever eats it, so I tried this and it was such a huge hit it was gone. I have modified it for everyday use to make it healthier by using lean bacon or turkey bacon, low fat cheddar cheese, a sugar substitute and no fat mayonnaise, and for a touch of sweet dried cranberry's (I don't care for raisins). This is such a great recipe and so easy plus it gets people to eat there veggies.

Southern Style Deviled Eggs

This is a great base recipe that can built on or served as is. I prefer Dijon mustard and spice brown which I divide in half. To keep the smooth consistency I strain the relish, I also add a few dashes of Tabasco and a few dashes of worsteshire sauce for a little more flavor. You can also add a small amount of vinegar

Easy Lemon Cookies

I made these cookies along with others and gave them in Christmas tins as I visited different families over the holidays. They were so easy and have a yummy lemon flavor, at the time I baked them I had no lemon extract, we had a huge snow storm and going to the store was not a good idea, so I added vanilla as a replacement. They turned out great.

Spanakopita (Greek Spinach Pie)

I love this dish, and made a few personal modifications for my own taste, I used half plain feta cheese and half seasoned feta. I used fresh baby spinach which is much easier to clean I also seasoned it with salt and pepper. Moisture was an issue but it wasn't too bad and didn't ruin the dish. I would also suggest some more cooking time. All in all this was a excellent dish.

Apple Crisp II

I made this over the weekend, and it was good, but I would definitely take other reviewers suggestions and reduce the water (or not add any at all) I also thought it was a little too sweet for my taste. But it was easy to make and other then being a little watery and sweet we loved it.

Joey's Peanut Butter Cookies

These cookies turned out great, I added my own touches by substituting 1/2 of the called for butter with butter flavored shortening and added chocolate chips. Very yummy creamy and good!
