Frozen Blueberry Muffins

They turned out pretty good but I did add more milk to them as the batter was pretty dry, but I did use King Arthur Whole Wheat flour. The topping was different but tasted good. I also halved the recipe to 12.

MMMMM... Brownies

All I can say is that if you like chocolate these are for you! They were easy to make and were moist and delicious! I actually just put them into cupcake papers and made them that way. All in the family loved them! Thanks for sharing.

Angel Chicken Pasta

This was pretty good. My whole family loved it. I actually just cut up the chicken and did everything on the stovetop. The sauce is really excellent. The only change I made was I added extra milk to make the wine flavor a little less, as our kids wouldn't have ate it if I didn't do that :). Overall a great meal.

Cottage Cheese Meat Loaf

This was tasty; however, I would use about 1/2 of the cottage cheese that is called for and 1/2 of what is called for with the quick cooking oats. It was VERY moist but you could really taste the cottage cheese and even the oatmeal, so all agreed that it was a bit overpowering in that perspective. I also used a bit of Worcestershire sauce, as it makes meats taste awesome! I usually add ketchup mixed with brown sugar and use that as a glaze towards the end of cooking. Overall, a great recipe and will use again with the modifications. It is a great way to use up cottage cheese and it definitely makes the meatloaf go a lot further by adding to it. It is a great way to get in a little extra calcium and fiber from the oatmeal!

Slow Cooker Chicken Stroganoff

This was sooo easy to make. I simply took frozen boneless/skinless chicken breasts (3 of them) and thawed them a bit in the microwave (since I forgot to take them out ahead of time). I then rinsed them and cut them into pretty good size chunks and added them to the crockpot. I then added 1/2 can of chicken broth and 1 can of cream of chicken soup plus the Italian seasoning packet. I mixed it all together and put it on high for about 3 hours, then I put it on low for another hour. I added the cream cheese just before I was getting the noodles cooked to use to mix with it. I cooked 1 lb. of noodles, mixed in the sauce w/chicken and walla! It was a big hit with all and the chicken was sooo moist! Will definitely make again. Great for those who don't have much time to cook.

Vicki's Hush Puppies

These turned out really good. I didn't have self-rising flour or cornmeal so used some baking powder to help with that. I did use most of 1 medium-sized onion and I did grate it for the juice. They were not dry at all and cooked up really fast. I might, however, cut back a bit on the sugar as they were pretty sweet but that could have been because I used a sweet onion too. Kids loved them! Will make again!

Beth's Chocolate Chip Cookies

I made these tonight and added 1 tbls. of mayo and they turned out great! They do make you thirsty but hey doesn't any good cookie? My kids loved them and so did I. Still trying to get the hubby to try one but he is unsure about mayo in his cookies LOL.

Egg in a Hole

This is one of my favorites. Cheap and easy to make and everyone loves them! We called it a "bird's nest" and my dad used to make these for us all the time. I always use spray from a can so it doesn't stick, as I am not too fond of grease, but you can add a bit of any oil you would like to give it extra flavor and cook the bread with a more crunchier outside.

USMC SOS

This turned out awesome! I did make a few changes, however. I did use 1 lb. lean ground beef, 2 1-/2 tbls. butter and I used about 5 tbls. flour, I used chicken broth instead of beef, as I was out and I used the whole can of broth, so as not to waste. I also microwaved frozen veges in my microcooker and then added it all together. I took refrig. biscuits and baked those in the oven while preparing the rest. Just open the biscuits up and pour on the sauce! My whole family, including my older infant daughter loved it!

Mexican Egg Rolls

These were yummy! Whole family enjoyed them, although I made them with just hamburger and cheese for the kids and the remainder of the goods for us adults. Make sure to not overcook and drain well or will be GREASY.
