Mound Bars

These were delicious! I used bittersweet chocolate chips, and that seemed to be the right choice (at least for our house). I wish I had read the reviews and saw to sprinkle the coconut on the crust, followed by the SCM - it wasn't a huge deal, but it would have made an already simple recipe more simple. My only real criticism is that I wish the coconut filling was thicker, and I see that a lot of reviewers felt the same - next time! :)

Spicy Tarragon Yogurt Chicken

This was SO delicious! Thank you, Chef John! I made the recipe for six servings and baked them at 400 for 20-25 minutes. According to my husband, this ranks in one of the Top 5 meals I've ever made. :) AND thanks to Rex Hutcheson's suggestion, I also made your delicious Braised Black Lentils as well. Perfect pair!

Nana's Acorn Squash

This was my first time making acorn squash, and it couldn't have been any easier or tasted better! My squash was pretty small so I used half of the butter and half of the brown sugar. We'll be making this a lot now! Thank you!

Chicken and Kale in Parmesan Cream Sauce

This was DELICIOUS! I used baby kale so I didn't have to mess with de-stemming (and I had it); 2% milk and some cornstarch (didn't have heavy whipping cream); a blend of Parmesan, asiago, and Romano cheeses (what I had - sensing a theme? LOL!); minced garlic; more salt and pepper; served over/mixed with rigatoni; and garnished with a bit of basil and shaved Parmesan (not necessary, but I love garnishes). If you don't have or like kale, spinach would be a perfectly wonderful substitute. I will DEFINITELY use this recipe again and again! Thank you!
