Apparently our family just does not like chorizo. It definietely needed more cheese to sausage, but there was nothing we could do after mixing in the cheese other than go to the store to get more.

Daddy's Fried Corn and Onions

I read the reviews and thought the people complaining about too much butter were being wusses. But then I made it and caramelized the onion with the 2 Tbsp of butter and the end result, after mixing in the corn, was a greasy, guilty side dish. I wish I had used only 1/2-1 Tbsp.

Chicken Piccata with Angel Hair Pasta

I LOVED this recipe, and I don't give out 5 stars lightly. Tip: Be sure to get your pan very hot before adding the chicken, and then resist the urge to move it around as it cooks- let a nice brown crust start. There is nothing I would change, but I did add a little more water when adding the spaghetti because a lot of the sauce soaked into the chicken just before.

Bananas Foster Monkey Bread

This was amazing!! Great recipe to do with kids. I had one kid quarter the biscuits using a pizza cutter, and the other chunking the bananas... and husband stirred them all together. I used one 12 oz can of biscuits because it was what we had, and they turned out very well. Everyone loved it, and had fun making it as a family. Not sure if it is a dessert or brunch treat, but we ate the whole pan for dessert and will surely be making it again- I may even keep a can of biscuits in the fridge just for those times when the bananas get too ripe but I don't want to make banana bread.

Apple Cranberry Crisp

This was great! It does not need any more sugar than it says. I used a can of apple pie filling, and a can of whole cranberry sauce. Super easy to put together, baked up quick. Delicious!

Mediterranean Stuffed Zucchini

This was so good!! I didn't have many of the ingredients, but simple subs. Pork instead of lamb, no mint, canned tomatoes instead of fresh because it is winter and they are out of season. Figured canned was better than fresh at this time of the year. With the leftovers I added a little extra zucchini chopped up, some more tomatoes, and served it over rice. It was delicious and my no-veggie kids ate it up!

Evacuation Tuna & Pasta Salad

This makes a TON of pasta and is really pretty easy. It takes quite a lot of ingredients to prep, but it's worth it. My husband LOVES this and told me I could make it every week. I use half fat free sour cream/half mayo to cut down on calories but keep the creaminess and use frozen peas because we always have those in the freezer. This is an excellent summer salad, good for a potluck, and even better as leftovers.
