Zucchini Crustless Quiche

Super easy recipe. We didn't have Crisco or anything and lined the dish with unsalted butter and a quick canola oil spray, which worked fine. We used 1/2 med. white onion, which was plenty for us. I recommend omitting the salt.

Pork Chops with Apples, Onions, and Sweet Potatoes

I'm still getting used to "sweet" dinners, and I'd eat this again and again! Based on others' recommendations, we cooked a little longer for the potatoes, but I think it was a little too long for the pork - so I might recommend slightly pre-cooking the potatoes. We opted to chop all onions, apples, and potatoes, which I think I would prefer to layering big onion rings. We also used yellow onions, which I think provided the perfect balance. White onions may have been too strong.

Spiced Slow Cooker Applesauce

Aside from peeling the apples, this recipe was super-easy and wonderfully tasty. My husband raved about the applesauce on his pork tenderloin. I made 1.5 batches and had to start the cooking in a larger pot, then once the apples reduced was able to transfer into a standard size crockpot. I think 6 hours of cooking is the upper limit needed, but that may depend on the cooking temp of the crockpot. I used granny smiths, jazz, and honey crisp apples.

Colorful Vegetable Bake

Based on what we had in the house and my personal preference, I used red peppers instead of green and used Roma tomatoes instead of plum. I also opted for fresh green beans. We added onions (highly recommend), minced garlic, some garlic powder, basil, and thyme, to add more flavor. I agree that it turned out more "eggy" than I expected, but it was tasty and got compliments around the table. I ate leftovers for breakfast and it was quite tasty reheated. NOTE: Increase prep time from 10 to 30-45 minutes depending on your cooking experience level, how many veggies you're adding, and whether you're hand-chopping or using pre-chopped.

Chocolate Chow Mein Clusters

We used equal parts butterscotch and chocolate chips, and I think I will use more chocolate next time. We also used lightly salted cashews. They got great reviews all around!

Definitely glad I made this recipe over the others - the graham crackers make all the difference! I doubled the recipe and used 1 cup generic store brand creamy PB (lower sodium, lower fat) and one cup natural creamy PB. I should have poured more of the oil off the top of the natural PB as the mixture was too creamy, and I had to freeze the balls before dipping. I liked the more peanut taste from the natural PB. I can't figure out a good way of closing or covering the holes but that doesn't change how great they taste!

Creamy Carrot With Curry Soup

This was a hit at Christmas dinner with several guests asking for the recipe. My husband threw in more than a pinch of sugar, and I thought it was too sweet as a result. Otherwise, easy recipe, great to take in a crock pot to a potluck or to keep warm before serving. Because it was a potluck/buffet, I opted for no garnish, which did not lack for taste.

These tasted good but were a little more "eggy" than I'd hoped or was prepared for. They also didn't make good finger food, which I was hoping. Be sure to serve on a plate with fork.

Cranberry Brunch Punch

While I, personally, wouldn't have given this five stars, I'm basing my rating on how quickly it went at a recent brunch. I would recommend doubling or tripling the recipe, especially if there are kids in attendance - they LOVED it! Ours was more murky looking and less colorfully-appealing than the picture but tasted great all the same.

Brunch Strata

This would be great without the ham, too, for vegetarians or non-pork eaters. We opted for red peppers instead of green and used yellow onions. Due to allergies we omitted the garlic and added some pepper. Tasty and a big hit at brunch! I would also bump up the prep time a bit.

Savory Slow Cooker Squash and Apple Dish

Fair. My crockpot cooks rather quickly, so on high it took only about 2.5-3 hrs. Mine is also old-school, so I couldn't fit the requisite amount of ingredients and had to guess at the proportions I was adding. I used yellow onion and thought it was overpowering. I recommend sauteeing the onions first for a more consistent texture, otherwise, it's crunchy onions with mushy squash and apples. Mine looks nothing like the picture and the sqaush ended up with a stringy texture. Not sure I'll make this one again.

Extra Easy Hummus

Yes, this was easy, and I tried it because I didn't have any tahini on-hand, and I only found out after the fact that I had sesame oil. This recipe left something to be desired (perhaps I missed the sesame taste and couldn't get past it?). I almost tripled the cayenne and lemon and used a little more salt, and still this left my palate wanting.
