Eggplant Parmesan II

This was a very tasty recipe. The only suggestion I would make is to brown the eggplant to your likeness. I like mine crispy so I browned them for 12 minutes on each side and they were a big hit.

Shrimp Enchiladas Suizas

I loved these enchiladas! I didn't have cooked shrimp or spinach so I used chicken mixed with a little sour cream and fresh cheese and it was perfect.

Mrs. Sigg's Fresh Pumpkin Pie

Seven Layer Gelatin Salad

I made this for a Sponge Bob birthday party and the kids loved it. The only trouble I had was getting the last layer out of the pan. Be sure to wait the 45 minutes, or more, between each layer so that the colors don't mix. There is always room for jello.

Chocolate Wave Zucchini Bread

This bread was amazing! Non veggie lovers will be surprised to find that you have snuck a veggie into their diet. I stuck to the recipe exactly but next time I may just mix it all and just make it chocolate zucchini bread. Thank you for sharing this amazing recipe.

Zucchini Nut Cookies

These were great! We have an abundance of zucchini in our garden and this was a great way to use it up. The cookies came out cakey & moist. We all loved them. The only thing I would add is a 1/2 a cup of oats. Yum.

Chocolate Cornstarch Pudding

This was very tasty. I followed others suggestions and added extra coco powder but it wasn't enough chocolate flavor for me. Next time I will add more coco and omit the butter and vanilla, it took away from the flavor. I served my pudding with sand on top. Everyone loved it.

Cabbage Rolls II

This was a great starting point! I had cabbage sitting in my fridge and I wanted to find something to do with it so when I saw this recipe was for the slow cooker I was sold. I did follow others instructions on freezing the cabbage and that worked great. I used cooked brown rice made in chicken broth and added a tsp of minced garlic to the mix. I didn't have any plain tomato sauce so I used jarred 4 cheese sauce. I also doubled the recipe but I would recomend layering the sauce with the rolls and using extra suace. My whole family had seconds. It is going to be a favorite around my house. Thank you for the great recipe!
