Raspberry Chocolate Supremes

These are fantastic and taste like a raspberry cordial! I used a 11x7 pan which was perfect. Sugar-free jam & low-fat cream cheese were my only changes which still allowed for a decadent dessert.

Simple Whole Wheat Bread

This was my 1st attempt at bread and it was easy! I used 2 pans as suggested by others and used my Kitchenaid mixer to knead the dough. I was short on honey, so I used sugar also, but cut the total amount used by at least half to avoid having it too sweet. I also didn't think all the butter was necessary, so I only added 2T instead of 3, and did not coat the finished loaf with butter and it's still not hard 3 days later. The taste is similar to store loaf bread, but slightly heartier.

Seven Layer Bars

These are delicious and always a crowd pleaser! I no longer buy sweetened condensed milk, but rather, make my own, so that was the only ingredient change I made. Oh, and I used cinnamon grahams! However, I followed the directions off the Eagle Sweetened Condensed Milk website for this recipe which have you mix the butter & crumbs, then pour the sweetened condensed milk over, and sprinkle with your nuts, chips, & coconut. I had no issues with this layering technique and would do it again this way.

Salsa II

This is a fantastic base recipe that makes salsa with a consistency similar to salsa in a jar (rather than the typical homemade ones that are just chopped veggies w/ no sauciness). I scaled down the recipe and have made twice - both times only using red onion and omitting the white & yellow. I don't like onions, but understand they're needed in salsa, so I soaked my chopped red onion in water for 15 minutes to take out some of the sting, and then ended up boiling my salsa over an hour to get it a bit less runny which also helped the onions to blend in. My two batches were very different from one another due to the tomatoes I used in each (2nd batch was sweet due to many baby tomatoes used from the garden). This is easily my go-to recipe to use up garden tomatoes and please a crowd!

Curry Broccoli Salad

I couldn't give this a bad rating because I changed too much about it, but I think it's an excellent base recipe for that classic cold broccoli salad. I used half broccoli & half cauliflower, omitted the bacon & onions on preference, reduced the craisins, and used plain greek yogurt instead of mayo. It was a very healthy version of this and I thought it was delicious. I do plan on making again and I'd add more curry powder when making again to balance the sweetness. Don't be afraid to try some of my substitutions!

Black Russian Cake I

This was a very moist cake! I made some healthy subs with 2 eggs & 2 egg whites, half applesauce & half oil, and mostly splenda rather than sugar and you couldn't tell. I made the glaze as is despite other reviews and thought it added to the moistness of the cake. I also used Cake flavored vodka rather than regular which was delicious. I would make this again, but in addition to the glaze that soaks in, I'd likely make a frosting for the top. It's very versatile and I've already made a 2nd one using chocolate liqueur & chocolate vodka with a chocolate cake mix - haven't cut into it yet, but expect it to be just as moist & tasty! ---Wanted to add my 2nd one with chocolate liqueur & choc vodka was AMAZING - everyone raved and I even liked it and I'm not a chocolate cake person - this will be my go-to chocolate cake!! I used chocolate buttercream frosting (in addition to the glaze).

Banana Banana Bread

I give this 4 stars because it is a fantastic base, but is missing additional flavors that my family & friends prefer (cinnamon - I added 1 tsp & would do more, chocolate chips, and nuts). The banana flavor was great and I will make again when I have a lot of bananas to use (it took me 7 to get the required measurement). The only other change I made was to use 1 egg white & 1 full egg. I like this base & will try again with my add-ins.

Shortbread Crust

This gets 4 stars for how it is "as is." I made 1/2 a recipe to get 1 pie crust. It was really sticky & while I could get it pressed in the pie plate, it was WAY too sticky to roll pieces to make a decorative top. I had to add more flour to be able to work with it. However, the taste was great. I will make again with more flour.

Mexican Pasta

I feel like this recipe will please anyone - I served it because I had a vegan friend eating over - everyone loved it! I used a fresh tomato instead of canned, I used an entire can of corn that had some peppers in it and added a small can of green chilies. I also used a mix of shell & rotini noodles. I omitted onions since I don't like them and used a bit more black olives. It was more than enough to feed 4. Loved that this was healthy & tasty! I can see it being fantastic with ground turkey/beef added or omitting the noodles and serving in tortillas!

Jamaican Jerk Dry Rub

This seasoning blend was fantastic on chicken thighs! I reduced the recipe by substituting the word "cups" with "teaspoons" and then cut those amounts in half. I had enough to fully season 4 chicken thighs and some leftover. I thought the amount of cayenne was quite a bit so I reduced that (from 4 to 3) and it was perfect spicy for me who likes some "zip." If you don't do spicy foods well, I'd take it down even further. This paired amazing with a side of rice made with coconut milk and with chunks of pineapple/mango/banana. A tropical dinner of sorts! I will be making this again & think it would go great on pork chops also. I didn't have time to marinate either, so that's something to try for me in the future (still good without!)

Thai Chicken

I hate recipes where I need to read the reviews to know how to make it properly because I don't always have the time to do this. Fortunately, I did this time and cut the soy sauce to 1/3 C which still was a bit on the salty side for us. I omitted the onions since I dislike. It was good, but I wouldn't make this again. I'd rather search for a recipe that wows me. I think it could use a bit more hot pepper sauce too. I really felt like the sauce was more like a zippy version of a beef tips & mushroom dish sauce.

Lemon Fiesta Cake

It was good, but I would never make this specific recipe again if I wanted a lemon cake. I will look elsewhere for a better one. It was much more of a coffee cake texture - you couldn't eat it without a beverage. Otherwise it was good, just not the texture/moistness I like.

Aunt Anne's Coffee Cake

I only gave this 3 stars because made as is, it is really flat (3/4") tall. After making it I went back and read reviews where users say to make in an 8x8 pan rather than a 9x13". I shouldn't have to read reviews to learn how to make it correctly. It tastes great and I would make it again, but not as printed! Make in a 8x8" or have an embarassingly flat cake!

Never Enough Green Bean Casserole

I feel like I shouldn't review b/c I changed this so much, but this recipe idea saved me! My in-laws asked me to bring green bean casserole and I am SO sick of it and don't ever want to see it at a meal again. This was a great variation and no one complained that this wasn't the traditional version. I changed it up by using 1 can of cream of mushroom soup mixed w/ 3 oz velveeta which I poured over 3 cans worth of green beans & 8 oz of mushrooms which I fried in a pan first to get some of the moisture out. We had it in the microwave first, then it made its way into the oven as space allowed, so I don't have completely accurate directions there.

Moroccan Chicken Stew

I wouldn't call this a stew, but more of chicken with sauce. It is not a stew, as there's not enough liquidness to call it that. Doubled the spices after reading the other reviews & very happy I did. Omitted onion due to preference. My husband thought this was great, as did I. I think you could even add a small amount of brown sugar to the sauce. Will make again!

Classic Meatloaf

This meat loaf is delicious and I love the spicy zip to it! I omitted onions & celery due to preference, cut the recipe in half, and made in a bread pan packed in. Even though I halved the recipe, it still required the long end of the baking time (35-40 min) to get up to the needed temperature. This will be my "go-to" recipe - husband loves it too!

Cake Balls

These were well liked at my party despite looking a bit messy, though I can see why some on here didn't like them. You have to like canned frosting to like these (which I do) because that flavor comes through. Following the advice of others and avoiding these from being mush, I used only a half can of frosting in each of my two batches (red velvet & funfetti) and I recommend doing this, as I liked the texture & wouldn't want them softer. I followed the advice to let the cakes cool at least 30 minutes, and then refrigerated the mixed cake/frosting overnight. After making balls, I placed in freezer for an hour, and they could have even went longer. I tried making my own coating out of white chips & crisco and chocolate chips & crisco. It was thicker than bark & I had to double it & use 6oz of melted chips. Most of my balls also were not completely covered, rather they had globs of hard coating and were not very pretty. They tasted good, but not outstanding. For the effort I had to put in and how sloppy they looked, I won't be making these again. Much easier recipes out there that taste just as good and look better!

This is a good base recipe, though in my opinion, it needed mini chocolate chips added! I subbed applesauce for most of the vegetable oil and splenda for sugar. This is a great bread recipe!
