Roast Sticky Chicken-Rotisserie Style

This is amazingly delicious! The skin is crispy, and the meat is tender and juicy! I have used this rub many times now, and love it!

My mom and I made these at a friend's birthday party. They are so easy to make, a drunk person could make them. The flavor is excellent, but I felt the amount of tequila was a little too much. Overall, I liked them, and would probably make again (with less tequila).

Hearty Hamburger Soup

Oh so yummy! My Mexican husband raved! Instead of the can of diced tomatoes I used Ro-Tel diced tomatoes with cilantro and lime juice. I also used all broth, no plain water. Will make again and again!

Pumpkin Casserole

This was delish! The only thing I did different was put mini marshmallows on top for the last 10 minutes of baking. It reminds me of pumpkin pie without the crust! Will make again :)

VERY GOOD! I used a can of diced jalapenos for extra spice. Also I used ground turkey instead of beef. Fed a big table full of people and then some!!!

Homemade Albondigas Soup

My Mexican husband was so pleased with me when he tasted this!!! It was so good! I made Mexican rice on the side and scooped it into the bowl when I served it!!! YUM YUM YUM!!!

Sugar Snap Peas

GREAT! I've never had sugar snaps cooked before and this was so good! I followed the recipe pretty much exactly, but I used dry thyme and I also used black pepper. I will be making them again!

Slow Cooker Italian Beef for Sandwiches

YUM! I used a very lean roast. I used beef broth instead of water. The last hour of cook time I put in red, orange, yellow, and green bell pepper slices and sliced fresh mushrooms and onions. I served it on toasted buns. It would be great with some Hot Italian Giardiniera!!!

Chili Rellenos Casserole

VERY GOOD! I followed the recipe exactly (except I used enchilada sauce) and it needs more chilis. I say get 4 cans not 2. It didn't fill up my 9x13. We ate it with corn tortillas and sour cream.

Slow Cooker Chicken Taco Soup

I'm not sure if I did it wrong, or if it's just not for me. The beer flavor was too strong and it was kind of boring. I don't think I'll make it again. Darn, I had high hopes.

Country Apple Dumplings

OMG! These were the bomb! I used Sierra Mist instead. I didn't have any Mt. Dew. Next time I'm going to spinkle the crescent rolls with cinnamon sugar before I roll up the apple slice. I served them hot over a scoop of vanilla ice cream. To make them truly sinful squirt caramel topping on top!
