Double-Cheese Eggs Benedict

I was so excited to make my own eggs benedict. I was disappointed with this one. Needed lemon flavor. Nix the Parmesan cheese, WAY too strong. Won't make this one again.

Chicken Kiev

I will NEVER buy a packaged kiev again. I think the dill did it. Followed receipe, only added BonBell cheese (1/2) per breast. All I can say is excellent. Fried to brown, finished in oven (350 degrees for 30 mins.)

Amaretto

OH YEA!!! This recipe is great! I am an amaretto lover. It is as good as the expensive one. The only thing I changed is......instead of just letting the sugar mixture 'cool' I CHILLED it. You probably could just make the sugar mixture and refrigerate it overnight and then continue with the recipe. Next time I will use a 'better grade' vodka but the cheap one was really good. I saved an Amaretto bottle (750 ML) and this recipe made about 1 cup more. @ more than 1/2 the price of the store stuff. Hope you all ENJOY ......... I AM!

Candied Yams

This was an excellent recipe, I myself am not fond of sweet potatoes but............ I did tweek a bit although I'm sure it would have been just fine as is. I baked the sweet potatoes til they were just getting soft. Then peeled and sliced them about 1 in. thick. Put in casserole dish. I boiled the butter and brown sugar and added 2 Tbls. of real maple syrup. Poured over sweet potatoes and topped with marshmallows and baked. This is definitely a keeper recipe.

This is an excellent recipe. Plus you can make it for a crowd....wonderful. Be sure to use crushed ice....takes some of the sweetness away. I only made a 1/2 recipe because I didn't want to waste my bourbon if I didn't like it. WELL
