Green Pea Pesto

I was thrilled to find this recipe - I've always made pesto with spinach to boost the nutritional value for my preschooler, but I was low on fresh basil and had no spinach in the house. As luck would have it, I happened to have a bag peas that had been hanging out in the back of the freezer for months. I tried the recipe as written and it was excellent. I decided to tweak it to the "gusto" of my family, and I added a little more olive oil, red pepper flakes and salt. My 3-year old just ate 3 spoonfuls right out of the food processor and he LOVED it! This may become our basic pesto recipe from now on!!

Banana Oat Muffins

My preschooler announced that he wanted to make muffins this evening. Searching through my fridge, I had very few ingredients - but I DID have bananas! I was initially attracted to this recipe because it called for rolled oats, which makes for a healthier version of a muffin. I followed the recipe exactly, other than using 1c whole wheat flour and 1/2c ap. I also decreased the sugar to 1/3 c. Thanks so much for this recipe - it was quick, easy, healthy, and our whole family loved the end result!!

Whole Wheat, Oatmeal, and Banana Pancakes

My preschooler is a picky eater, and he not only loves to put these pancakes together, he loves eating them. I have tried other whole-grain pancake recipes but this is the one my 3 year old asks for again and again! In terms of the recipe, I followed the directions to the T, minus the dry milk powder and adding 2T of freshly ground flaxseed. We usually make a 1/2 recipe and save the leftovers for a mid-afternoon snack. Thanks amom2boys!

Mango Muffins

This recipe had been in my saved file for over a month, and I am glad I tried it this evening! It was very easy to put together. I made a few changes - only 1/2 c oil, 2 eggs, and 1/2 wheat 1/2 white flour. I also used dried blueberries instead of raisins. The muffins definitely stick to the muffin papers because of the mango chunks, but not a big deal. As I live in Costa Rica with 3 mango trees in my yard, I will definitely be making these muffins again! Thanks for the recipe :)

Gramma's Apple Bread Pudding

This bread pudding was the first I've ever made - it is simple and delicious. I sauteed diced apples, raisins and a cinnamon stick in butter for about 5 minutes and added that mixture to the cubed bread, which I poured directly in the pan. I added extra nutmeg and allspice to the milk mixture and poured the liquid ingredients on top of the bread. I only had to bake for 30 minutes, and it came out very well!! My husband is eating his second serving right now, and my toddler cannot get enough :)

Veggie Burgers

This burger was fantastic! My fridge was getting a little "bare" and after seeing this recipe, I decided to use up the last of the veggies that were in there...carrots, zucchini, well-minced broccoli, onion, garlic, etc. I sauteed everything, put in a big squirt of ranch dressing, some dashes of hot sauce, and adjusted salt and pepper. I semi-ground the oatmeal and added about 1/4 c of wheat germ and let it all "sit" for about 20 minutes. I found no need for egg or flour. The burgers are presently cooking on my cast-rom skillet with just a smidge of oil, and my toddler keeps coming over, asking for more "burger". This kid neve reats veggies, so this recipe is a GEM for our family. Thank you!!
