Lentil Soup with Lemon

Very tasty! For us it's better as a chowder or side dish. We made the following changes: saute onion, garlic and carrots over medium until very tender. Add about 1/4 tsp. curry with spices and use marinara instead of tomato paste. Only use 3 cups chicken broth so it's a bit thicker rather than soup-like. No olive oil or extra chili powder to finish just cilantro & lime juice. N - with sour cream C - with grilled chicken and naan.

Bacon Wrapped Smokies

Great flavor! 2# bacon cut into thirds for 3 pkg. little smokies . No need for toothpicks. Next time foil pan, spray cooling rack with Pam, lay on smokies, sprinkle with brown sugar. After baking in middle or oven, broil to crisp up bacon, flip and crisp again. Keeps well in a crock pot with a little maple syrup drizzled over top (then you don't have to buy expensive maple flavored bacon).

Taco Seasoning I

Love it with tweaks to make it more like Taco Bell mild: 1 tsp. chili powder 1/2 tsp. pepper 1/4 tsp. garlic powder 1/4 tsp. onion powder 1/4 tsp. dried oregano 1/2 tsp. paprika 1 1/2 tsp. ground cumin 1 tsp. salt

Grilled Marinated Swordfish

Sauce had great flavor but didn't make it's way into the meat. Next time we will either cut the fish into kabobs or make cross-hatch marks on the outside of the fish to get more flavor!

Strawberry Pie II

WOW! I didn't expect this to be so incredible (just made it because we picked strawberries and my son had asked for a pie with them). As soon as the crust came out of the oven I sprinkled chocolate chips on the bottom and stuck it in the cooling oven for 2 minutes so it was easy to spread ... no soggy crust and no worries about the holes from my shrunken crust (unusual, but I don't normally prebake them either). We used about 2 1/2 cups of smashed berries that I pureed to have a smooth consistency ... and took a previous review's suggestion to combine the sugar and cornstarch to avoid lumps. Just dumped everything together in a pot and simmered it for 10 minutes. No need for whipped cream because it's absolutely amazing as is! Thanks OKBEE. Definitely a keeper :)

Mexican Rice II

We had to keep adding rice and cooked it at least twice as long, but it was delicious! Even the texture was just like our favorite Mexican restaurant (Chapallas Family Restaurant). Next time we'll cut the dry rice in half because it was huge and this will take care of the dryness factor. Definitely a keeper!

Chicken Eugene

Prefer crispy bacon? Mix the sour cream, soup and chopped dried beef, spread into pan. Lay chicken over sour cream mixture, lay bacon on top. Cover with foil and bake for 2 1/2 hours at 325 F. ... uncover for last 30 minutes. DEEEELICIOUS!!!! (This was the first meal my husband ever made for me ... he called it Yummy Chicken Dinner. Very appropriate name :))

Caramelized Brussels Sprouts with Pistachios

OH MY GOODNESS - these are amazing!!! I started caramelizing the onions in butter with a little salt while steaming the sprouts, then threw the sprouts in as soon as they were done. Took quite a bit longer to caramelize them but glad I waited to add vinegar & sugar because they were incredible like this!!!
