About this Cook
I am married and we have three kids, a daughter 27, a son 19,who is in the army and somewhere in Iraq right now, and a 9 year old boy.I work full time and am the leader for my sons webelo den. I like to cook healthy, quick meals on weekdays. On the weekend I love to cook and bake.I grow vegetables in the summer and love to cook on the qrill. I use charcoal, and love my Weber!!! I am trying to cook smaller portions now that my son is gone. It takes some getting used to. He was great at eating leftovers, since he was never home for dinner. I miss him so much!!!
My favorite things to cook
I really love cooking Asian food.We love Mexican food,my husband has taught me how to cook a lot of traditional dishes from Mexico.I like making pastas, pies, fruit deserts, cookies, casseroles, and I can cook just about anything.I love seafood and my son and husband especially love shrimp,so I cook fish at least once a week.
My favorite family cooking traditions
I cook a wonderful Thanksgiving feast every year. On Christmas eve I invite family and friends and we make Tamales, and Pasole. It's a lot of fun.And during the summer my kids and I love to go into the garden and see whats ripe for dinner. We love to grill marinated zucchini.
My cooking triumphs
Making perfect chili rellenos, and a lemon meringue pie.And the year we went to a Christmas Eve party, I spent days before making different cookies, and choc.peppermint bark, and lemon bars, rocky road etc. Everything turned out perfect. I made a beautiful tray with ribbon. Everyone loved the treats.
My cooking tragedies
I was up late one summer making strawberry jam. I made a lot. Went to bed. got up the next morning went into the kitchen saw all the jars on the counter neat and tidy.I picked one up and it was runny. Looked over on the stove and there sat the box of pectin, unopened. I cooked and stirred, and forget to add the darned pectin!!!I have yet to master cooking with yeast. My attempts at making bread were not good. I'll keep on trying.

Lobster Rolls
I used shrimp. I know,it's now a shrimp roll.I live near San Francisco but Lobster is still expensive.I used dill weed, and about 1/4 of a stalk of celery.Sauted the shrimp with garlic and olive oil. My husband and I love them.Next time I will splurge on Lobster.

I tried this on a ham sandwhich. It was very good. It would be wonderful served alongside baked ham.
