Hearty Breakfast Muffins

These muffins were so hearty and full of good stuff, the flavor is great but they stay really moist due to all the fruits/veg in them, my husband wasn't a fan. I really enjoyed them, might add just a little more flour next time to get them a bit drier. Oh and make sure you spray your muffin tins or liners with oil or something, I thought it wouldn't matter so I didn't, and they totally stuck to the liners! Had to partially freeze them to get them off lol. Overall though a tasty healthy muffin, will make again maybe with some modifications.

No-Bake Chocolate Coconut Cookies

I've been making these for years and they are delish! My family's favorite variation that I make quite often is I add 1 cup peanut butter to the butter/sugar mixture in the saucepan. Either way these are excellent, chewy and chocolately, definitely need to be kept cold to keep them from getting too soft. I love them right out of the freezer! Give this recipe a try, you'll be glad you did!

Spicy Sausage and Rice Casserole

Just made this for dinner, and it was superb. Only had 16 ounces of sausage but would definitely recommend the full amount for next time. Used only one bell pepper and added 1 1/2 cups fresh mushrooms. As per previous reviews I subbed diced tomatoes for the whole, reduced the cayenne and pepper to a pinch of each, and only used 1/2 tsp salt. I also cooked it the whole time on the stove just to make things easier. This was a super easy, quick meal to make, and I loved that I had everything on hand already. Definitely a keeper, especially for when I'm short on time. Thanks!

Slow Cooker Beef Stew I

A Firefighter's Meatloaf

Amazing amazing!!!! This was I think the best meatloaf I've ever made. The only thing I did different was use ketchup on top instead of bbq sauce, and I put it on before cooking, and then again halfway through. The flavor was perfect all round, and it's such a comforting food, I loved it. Will be making again many times to come.

Pork Chops for the Slow Cooker

This recipe was so delicious and so easy to make. I followed the recipe exactly as stated, and then poured the sauce into a pot and thickened with cornstarch, otherwise it was too runny to use like a gravy. I'm always looking for ways to cook pork chops and have them be tender not tough, and this is one of the best I've found. A new favorite!!!

Easy Devonshire Cream

Not sure what real devonshire cream tastes like, but this was amazing. We had it on scones with jam and could hardly stop eating it. It would also be a great dip for fruit. It's definitely cream cheesy tasting, so if that's not what you're looking for then don't make this recipe. I will be making this again, and definitely recommend it!

Chocolate Zucchini Bread

This was my first taste of chocolate zucchini loaf and it was delicious! I made two 9x5 size loaves instead of three 8x4. I followed the recipe almost exactly as written except I reduced the oil to one cup (don't do any less than that or else the bread gets dry), skipped the butter, used all vanilla instead of almond extract, and I subbed in chocolate chips for the pecans and raisins. Definitely a keeper, moist and chocolatey, the chocolate chips kick up the chocolate flavor. Thanks for a great recipe!

Mom's Zucchini Bread

This bread was phenomenal! I've been making a zucchini bread with pineapple for a long time, and this one just might have outdone it. Was a little sweet even though I cut back the sugar to 2 cups, might do 1 1/2 next time. Also used about 3 cups zucchini instead of just two. It is so moist and hard to stop eating, definitely a keeper!

Amish Cookies

These were delicious! I followed the recipe exactly as written except I added 1 cup of skor toffee bits, and the dough was a bit crumbly so I rolled it into 1 inch balls and flattened slightly. They tasted buttery a little like shortbread, and not too sweet. Perfect anytime cookie!

Streusel Rhubarb Bread

This was such a moist and flavorful loaf, will definitely make again. I used one 9x5 loaf pan cause i don't have two 8x4 ones, so i preheated to oven to 325 instead and it took about 1 hour 20 minutes to bake. The crust was perfect, not too brown, and the cinnamon sugar on top was just the right crunch. Definitely a keeper!

Barbecued Beef

I've tried a few barbeque beef recipes and this one is definitely the best! So much flavor, not too sweet or saucy, just right really. I did try to cut off most of the fat before cooking to keep it less greasy, then just followed the recipe as is. Will definitely make again, going in my special recipe box for sure!!!

Cowboy Oatmeal Cookies

These were pretty tasty cookies! I did do as other reviews had suggested and added 1 tsp vanilla and upped the oats to 3 cups, also used raisins and pecans instead of the chips. My first batch didn't spread much, just puffed up. So I lightly pressed down the next batch and they were much better. They're a very nice soft cookie, not too sweet. Will be making again.

Zucchini Brownies

I've gotta say the taste of these is really good, but they are more like cake than chewy brownies. I followed the instructions perfectly, didn't add or change anything. Great if called zucchini cake, will definitely make again!

Hot Artichoke and Spinach Dip II

I'm not a big fan of plain spinach dips, but love artichoke dip. My husband wanted to try this one and I was a bit skeptical but once I tried it I could hardly stop eating it! I was so creamy and cheesy, just the right amount of seasonings, it's definitely a keeper in my recipe box. Will be making anytime we do an appy night.

Chewy Peanut Butter Chocolate Chip Cookies

This recipes is a keeper in my kitchen! Have made quite a few times and love how they stayed soft and chewy. I did up the amount of peanut butter to 1 full cup and the flour to 2 1/2 cups for more flavor. Also I found that using all or half crunchy peanut butter gave more peanut flavor too because of the little pieces. They didn't spread out quite like some people said, but they stayed soft anyways so that doesn't matter to me.
