Mini Cheesecakes

People at the party kept asking me if I bought these premade from somewhere... the presentation was wonderful and they tasted great too! I used a regular size muffin tin and a graham cracker crust following the instructions on the box (you do not need to prebake the crust.) I doubled the recipe for 24 cheesecakes and had enough filling to make at least 12 more cheesecakes. 1 24oz can of the cherries was plenty. I baked them in the foil wrappers and then refrigerated them over night. The evening of the party, I took them out of the wrappers, put on the topping and served. They were perfect!

Jalapeno Popper Spread

Party hit! I ended up mixing the parm cheese into the dip instead of pouring on the top because I was serving it in small batches at a time. I served with blue tortilla chips, toasted french bread slices and fresh whole jalapeno's as a garnish. Everyone asked for the recipe!

Chocolate Covered Strawberries

These came out great! I do not have a double boiler so I used the microwave and it was perfect. Make sure you wash and dry off the berries very well before coating them in the chocolate. I melted the 2 tbsp of butter (as suggested by others) in a bowl in the microwave then I mixed in the bowl 1 whole bag of ghirardelli 60%cocoa chocolate. I put it in the microwave for 1.5 mins t 50% power, stirred and kept microwaving in 15 second intervals and stirring until it all melted. I just laid them on wax paper to harden. After an hour in the fridge they were perfect and ready to serve. Everyone commented on how professional they looked. HIGHLY recommend this for a crowd. 1 bag of chocolate easily coated 2 lbs of strawberries. I ended up coating pretzel rods with the leftover chocolate and still had chocolate to spare.

Soft Chocolate Cookies

These were very easy to make. I am not a regular baker and still had all the ingredients except for the cocoa right in the pantry. I accidently melted the butter instead of softening it and I think it was for the better. The batter ends up being very thick so the extra liquid from the butter worked out well. I also only baked them for 8 minutes and they came out perfectly with a soft middle. I added chocolate chips to give them some texture.
