Slow-Cooker Chicken Tortilla Soup

This was ridiculously good! And so easy! It took me seven minutes to throw all the stuff together. I took others' suggestions and just put the raw chicken straight into the slow cooker. No need to waste time cooking it ahead of time. I also just dumped the tomatoes in... Didn't mush them up or anything. I actually used skin on, bone in chicken breast halves (about two... So it was more like 1.5 pounds of chicken and it turned out great). When the whole thing was done I took the chicken out, removed the skin and bone, shredded the meat, and threw it back in. I think the skin added some much needed fatty richness to the soup and the bone added some more flavor. To save time I just topped the soup with crushed white corn tortilla chips. And shredded cheddar and extra cilantro! Definitely add avocado if you've got it! This one is a keeper! Tastes like a restaurant soup!

Coconut Macaroons III

Love this recipe. Best macaroons ever. Since there's no egg you don't run the risk of them being eggy. Since it has lots of sweetened condensed milk they don't get dry like many macaroons I've had. And are get super chewy and soft after baking! I've tried them with almond extract (substituting half the vanilla) and they're bomb. Parchment paper is a must -- I've tried wax paper and foil, and both stuff. I actually oil the parchment paper and sticking is never an issue. One complaint -- before they get toasted enough on top, they are too brown on the bottom. Not sure if it's my oven or not.

Zucchini Cornbread Casserole

This recipe is so dang good. I actually did not grate the zucchini because I was worried about it being too watery. I actually sliced the zucchini super thin. It looks cool this way and it has a less mushy texture. Try it!

Kielbasa and Cabbage II

This was awesome! When I made the following changes, it was a FIVE star recipe: cut the Cajun seasoning to one teaspoon, added two cloves of shredded garlic, and two teaspoons of Dijon mustard! So good!

Black Bean, Corn and Turkey Chili

This recipe is AMAZING. My boyfriend was raving about how delicious it was, and as a bonus, it is SUPER lean and healthy. I used a can of mixed beans instead of black beans (probably doesn't make much of a difference in taste) and used frozen corn, thawed, instead of canned corn (which DOES make a difference, in my opinion. AND I used a few cloves of minced fresh garlic in place of the garlic powder, and brown sugar instead of white. But even without these minor changes, this is a SOLID recipe that is going to make an appearance a lot in my apartment. Guilt-free comfort food.

Rossi's Sausage Gnocchi

Loved this! The only changes I made were using brown sugar instead of white... And I did use more than one teaspoon because I love a sweet tomato sauce! Also, instead of Italian seasoning I used fresh basil and fresh oregano. This recipe was pretty easy and it's definitely going in my book of favorites. Thank you!

Best Big, Fat, Chewy Chocolate Chip Cookie

Delicious. Best recipe I've ever used. The only thing is, take them out as soon as they look SLIGHTLY golden. I waited until the edges were definitely golden and they were crunchy.

Spicy Mango Sweet Potato Chicken

This was pretty darn good. I would have added more mango. Either use one very, very large mango or two medium-sized mangos. The mangos really add a nice flavor. In addition, I think it'd be better to ROAST the sweet potatoes. I think boiling them zapped them of their wonderful flavor (not to mention NUTRIENTS) and made them a bit soggy. I only gave it four stars because it wasn't something that was SO delicious that I just HAD to have a second helping! But it was extremely healthy and tasty, and it made for an easy weeknight meal.

Monster Sour Cream Enchiladas

This was a great recipe! I prepared it on a Wednesday night and then popped it in the oven on Thursday night. It turned out very tasty, but the white corn tortillas I used had gotten so soggy over night that you couldn't even tell they were there! So, I recommend that this dish is put in the oven as soon as it is prepared to avoid that sogginess. Also, I put the cheese and green onions on (I used shredded Mexican blend cheese and it was still great) in the last ten minutes of cooking. This way, it didn't get brown and gross-looking.
