Easy Fusilli with Tomato Pesto Sauce

This was very tasty! The whole family enjoyed it, including kids 9, 7, and 4. I thought the amount of sauce was perfect for the amount of noodles (we used brown rice fettucine.) The pesto I used was a homemade spinach basil pesto with lots of flavor, so I think that made it extra yummy. The color was a little strange, but once it was mixed it with the noodles it wasn't as noticable. Also, I doubled the recipe so we would have leftovers but only used 4 T olive oil. A perfect quick lunch.

Asparagus, Potato, and Onion Frittata

Cinnamon Belgian Waffles

These came out great! I used 1/2 tsp. cinnamon and the flavor was perfect. They browned well and did not get soggy after sitting a while. Also, I did not separate the eggs but added them whole.

Cannellini Beans and Greens on Garlic Toast

This was really good! I worried about the bread getting soggy, because my peasant bread (also from this site) was fresh out of the bread machine before I toasted it. It was perfect, though! It really all goes well together. My four year old thought the garlic rubbed on the bread made it spicy, but that was an important flavor in the dish... yum!!

Grain and Nut Whole Wheat Pancakes

These were very good! I used 1 cup white flour and 1/2 cup wheat instead of all wheat. I also ground the walnuts so they wouldn't be too chunky. Very yummy :)

Corn Dog Muffins

I really liked how these turned out; a non-fried corndog :)I didn't have any cornbread mix so I used the "Cornbread Muffins II" recipe on this site (plus the cheese). It made 24 muffins, and I cut the hot dogs into thirds instead of in half. Thanks!

Cornbread Muffins II

These were very good - I used them to make the Corn Dog Muffins on this site and added 1 cup shredded sharp cheddar to the batter. I baked them at 425 (because my pans are dark) for only 12 minutes or so. Nice and moist.

Cinnamon Bun Scones

These are very good! I even forgot to put the 2T of sugar into the nut/cinnamon/sugar swirl and they were fine. I use oj in the glaze, and I have to use 2 cookie sheets - the recipe makes a lot!

Unbelievable Rolls

These were yummy rolls - they looked a little like biscuits because I didn't take the time to shape them nicely, but they tasted good. I especially liked that there was very little clean-up since you can do all of the mixing/kneading in one big bowl.

Cheeseburger Vegetable Soup

This was a nice filling soup for a cold night. I threw in 3 cups of rice instead of two and the soup was very thick and chunky. I also had to sub cream of chicken soup for the cheddar cheese soup, but it still turned out nicely!

Texas Pralines

This recipe came out very well for me. It reminds me of a local treat here in Austin, Lammes "Texas Chewie" Praline, except it's a little lighter in color. Also, I used a silicone mat to set the pralines on and it worked great. If you haven't ever worked with sugar before, be ready to stir for a while to get it up to temperature - it's not a quick thing - but it's worth it! :)

Chewy Cocoa Brownies

Yum! This is a nice fudgy brownie. I made them without nuts and did not sprinkle powdered sugar on them. Absolutely wonderful with vanilla ice cream sprinkled with walnuts. I baked them for 18 minutes and they were pretty gooey in the middle, but that's how my husband likes them.

Southern Praline Pecan Cake

I made this exactly as written and it was very good. The pecans that are placed in the pan before the batter make it a little difficult to slice, though. I may just mix in the whole cup of pecans into the mix next time. Several people asked for the recipe. I also drizzled it with canned caramel frosting that I softened in the microwave. It was perfect with vanilla ice cream.

Almost No Fat Banana Bread

This was pretty good. I added 1/4 c chopped walnuts, 1 t vanilla, and sprinkled the top with 1 T sugar. (Made it 3 pts per serving on WW.) I also doubled the cinnamon and would not recommend it - it was a little too strong for me. It's definitely a dense/moist bread.

Alfredo Sauce

I found the cheese flavor to be very strong and overwhelming. I used a high quality, freshly grated parmesan - maybe that was the problem - I'm used to mild, packaged, preservative filled cheese! The consistency was good and it was very simple to make, though. Maybe I'll try again with a different parmesan.

Angel Biscuits II

I LOVE these biscuits. These are exactly what I've been looking for!I have always been disappointed with any other biscuit I've made from scratch (hard, dry) and I can't stand canned biscuits (sodium galore!). Yummy! I make the whole batch, freeze them, and reheat them a few at a time in the oven.
