Salmon and Pesto with Rice

This was unbelievably, melt-in-your-mouth, bursting full of flavor delicious! I did vary it up a bit - I added quartered cherry tomatoes, chopped mushrooms, and garlic in with the shallots. Used chicken stock as well. My husband raved about the meal. Will definitely make again. Thanks for the recipe!

Homemade Black Bean Veggie Burgers

Delicious! We used a poblano pepper instead of the green bell pepper, omitted the chili sauce and reduced the spices. Added more bread crumbs and it was perfect. We doubled the recipe and froze the rest for a quick meal later. Thanks for the recipe.

Curried Bean Salad

Really great salad! Made a few alterations. We're not big oregano fans, so instead substituted 1 tsp marjoram and 1 tsp basil. I upped the cumin and curry powder to about 1 tsp each and reduced the amt of vinegar and canola oil. Love that it doubles for lunch the next day.

Spanish-Style Quinoa

Great recipe. They're delicious stuffed in green peppers. I boil the peppers for 5 or so minutes first to soften them, then add the quinoa mixture and put back in the oven to melt with pepper jack cheese. In the mixture I used 1/2 of a red bell pepper and a can of tomatoes in lieu of the sauce, but make sure you add less water (or we used veggie broth) to account for the water thats cooked off from the tomatoes. A few things: I agree with others on increasing the spices a bit. And for me this recipe always takes longer than the stated prep/cook time. Takes a little over an hour or more from start to finish.

To Die For Blueberry Muffins

Delicious muffins! The muffin itself isn't too sweet, which compliments the sugary cinnamon topping quite well. Pretty high in calories, but each bite is well worth it. One thing: I bumped the temp down from 400 just a tad and reduced the cooking time to about 17.5 minutes. The would have overcooked otherwise.

Lentil Soup

Great, healthy lentil soup! Each time I make it, I tweak it differently. This time I added rosemary instead of oregano, doubled the carrots to make up for not having celery on hand, added 1/2 jalapeno I had in my fridge, doubled the bay leaf, used half veggie broth half water, and all fresh tomatoes. To cut cooking time, after about 30 minutes I used my immersion blender to puree the soup. Then I let it simmer a couple of minutes more before serving. This method speeds it up and blends the flavors together very nicely.

Tomatillo Salsa Verde

Excellent. I'd give this 6 stars if I could. I blended up the ingredients in a blender first before simmering for 15 minutes on the stove. The only liquid that I added was about 1/8 cup of veggie broth to the blender to get it started blending well. I also added extra garlic, extra cilantro and omitted the oregano. Served with carne asada tacos, perfect!

Whole Wheat Blueberry Pancakes

Great base recipe. Made a lot of modifications to my liking: doubled the batch, halved the (brown) sugar, instead of blueberries added golden raisins, a mashed banana, applesauce, walnuts, cinnamon, nutmeg, more milk and flax seed. Served with organic yogurt. Delicious!

Whole Wheat and Honey Pizza Dough

By far the best homemade pizza crust I've eaten. The addition of the honey is nice. My hubby and I like it because it's healthy and delish! Make sure to pre-bake it for at least 15 minutes, and if you're using a pizza stone, be sure to preheat that before pre-baking the pizza.

Juicy Turkey Burgers

I made this dish last night, and while the spices created a very nice flavor combination, I thought that the addition of the grated apple and the rice made it a bit too "mushy" on the inside.

Whole Grain Waffles

Excellent recipe. I enjoy it because it's healthy, fibrous and waffles are lighter and fluffier than expected. Used my new Belgian waffle maker and they turned out great. I doubled the recipe, cut the oil in half and added more applesauce, used brown sugar instead of white, and added lots of blueberries. I served it with 100% pure maple syrup. It was to die for!

Split Pea Soup with Rosemary

Great Soup. Added some pepper to give it a "kick", used turkey bacon, added a little more chicken stock, and pureed it. Served it with homemade whole wheat bread. So filling and healthy!
