Red Lentil Curry

This was delicious!! The good thing about using red lentils is that they cook very quickly. I had this dish together in about a half hour from start to finish. I took suggestions from other reviewers and replaced the tomato puree with a 14.5 oz can of diced fire-roasted tomatoes. I also added a cup and a half of frozen peas at the end. Otherwise I followed the directions as written. Served with hot garlic naan. I will definitely be making this again!

Spicy Tomato Soup

I just made this...it's quite tasty and easy to make! The only modifications I made were adding a half tsp of coriander powder, and I cut the amount of chili powder I used (from an Indian grocery) to 1 tsp. It was still quite spicy. I'd probably cut it down even further if I make it for people who don't like spice. Thanks for the recipe!

Soft Chocolate Chip Cookies II

This is a great basic chocolate chip recipe you can't go wrong with. They stay soft the next day, too! Follow the instructions exactly, especially the part about pulling them out of the oven before they are golden brown. If you let them finish on the baking sheet they will stay soft. Thanks!!

The Best Vegetarian Chili in the World

This is awesome chili! I didn't add jalapeno peppers since I didn't have any, and I thought it still had a good kick to it. I also didn't add vegetarian burger crumbles, but threw in a can of pinto beans instead. This will be great to make and freeze in containers for lunches during the week.

Vegetarian Sloppy Joes

Wow, this is really good! I used extra firm tofu instead of tempeh, since it was what I had on hand. I halved the recipe but stuck to the 1/4 cup tomato sauce. I left out the celery seed since I didn't have that on hand, either, and I used vegan worchestershire sauce. This would be a great quick weeknight meal!

Double Orange Cookies

Wow, these were so tasty and a hit at a cookie exchange I took them to. They stay so soft and moist, even after a couple days. And the orange flavor from the concentrate is just enough. Next time I'll make more frosting (it got a little low at the end). Thanks for the recipe!

Roasted Portobello Mushrooms with Blue Cheese

Crustless Spinach Quiche

Quick and delicious! I used egg beaters in place of regular eggs to reduce fat and cholesterol, and used a combination of colby and monterey jack cheeses (what I had on hand). I'm cutting carbs in the evening, this will definitely go in my rotation of low carb dinner recipes!

Banana Banana Bread

This was a good base recipe, although I did doctor it a little. I used vegetable oil instead of butter (I think this gives the bread a better texture). Like other reviewers I also added 1 tsp of each of vanilla extract and cinnamon, as well as a half tsp of almond extract (this gave it a really nice smell). I baked it for 65 minutes at 350 degrees, and there was no problem with the center being goopy. I also baked it on the lower rack of the oven to prevent the top from getting burned.

Best Marinara Sauce Yet

This was my first attempt at making marinara sauce, and it turned out really good! I didn't have parsley on hand. I added basil leaves and a pinch of red pepper flakes since I like my sauce spicy. It was a little acidic, I think I might use some bay leaves next time per a reviewer's suggestion to cut that. Thanks for the recipe!

Absolutely Best Brownies

These were delicious and gobbled up at a super bowl party I went to! I used the 1/2 cup flour/1/2 tsp baking powder/1/2 tsp salt combination since I did not have self-rising flour. I doubled the recipe and used a 13x9 inch pan, baked for 25 minutes. Came out perfect! Thanks!!

Cocoa Blueberry Cake

I made this exactly as directed. Not sure what happened, but the center was very gooey, even after I had baked it for 50 minutes. I took it out because the outer edges were clearly done. The parts that were done tasted pretty good. But I had to throw out the center. I'll tweak it and see what happens next time!

Vegetarian Chickpea Sandwich Filling

This is very good and filling. I made this for a quick dinner one day on a kaiser roll with french fries. Next time I'm going to try and spice it up with some chili powder and garam masala. Thanks for this healthful alternative!

Blueberry Muffins I

I made these this morning, and they turned out really good. I used the splenda baking sugar, so I kept it to a half cup. If I used regular sugar, I'd probably increase it to 3/4 cup. I also used a tsp of vanilla extract instead of lemon zest, and took the advice of another reviewer and sprinkled a little cinnamon on top before baking. Turned out delicious!

Ultimo's No-Bake Blueberry Squares

I wanted to test this before I take it to a potluck on Friday, and it is delicious! I took the advice of other reviewers and cut the sugar to 3/4 cup, used light cream cheese and whipped topping, and increased the lemon juice to 3/4 tsp. It came out a little thick for an 8 inch pan, but I'll be sure not to add all the filling to the pan when I make it again. But it's quick, easy to make, and delicious!!

Spicy Butter Cookies

These are really good, and so easy to make, too! I took the suggestions of the other reviewers and used 1/4 cup brown sugar and 3/4 cup white sugar, and I also added more nutmeg. They go great with an afternoon cup of tea!

Okra Fry

This is a really good, quick, and easy recipe. That much chili powder is NOT for the faint of heart, though...I cut it back to 1/2 tsp, and it was still quite spicy. The asafoetida powder (which you can find in an Indian grocery) really makes a difference. A little pinch goes a long way. Also, if you use frozen okra, they do leave the tips in, so make sure to take them out first!

Pasta with Spinach

This recipe is very delicious..flavorful but not overpowering. I used fresh spinach and grated parmesan cheese. I wish I had shredded, but that will have to be for next time. I did what a previous reviewer said and sprinkled the pine nuts on top instead of tossing them in, and it worked great! They're a really good addition. I'd make this again!
