Italian Love Cake

Reviewed: May 20, 2015
Loved it! Changes I made: Used Devil's Food Cake mix, whole milk ricotta, and light whipped topping. Also I only cooked it for 60 minutes because it was set by then. I didn't have a 9x13 dish so I used a large deep dish casserole pan and a bread pan. The bread pan separated perfectly, but the casserole dish did not, but it still looked and tasted delicious.

Cranberry Nut Bread I

Reviewed: Dec. 23, 2013
So great! My first time making Cranberry bread and here's the changes I made: 2 cups of whole cranberries. Since there was such little oil asked for I skipped it and just added a splash of Almond Milk to help the dough come together. So good!

Roast Potatoes

Reviewed: Jul. 22, 2013
Super Easy! I used small yellow potatoes, because that's what I had. I added salt, pepper, and Italian seasoning with just a bit of chili powder for a kick. I cooked them at 450 for 17ish minutes, then broiled for 4 minutes to get them golden and crispy! Love!

Spicy Oatmeal Raisin Cookies

Reviewed: May 26, 2013
Great recipe! Love having a variety of cake-mix cookie recipes on hand for very quick cookies! I made 30 medium-large sized cookies and did the calorie count...107/cookie, nice! If I actually made 48 they would have been way under 100 (67 calories/cookie), which is a nice advertiser! I did end up adding a tablespoon of water, which helped to mix the wet and dry ingredients together. Also, I baked them for around 15 minutes.

Yummy Taco Salad Dip

Reviewed: Jul. 29, 2011
Great! Here were my adjustments: added guacamole seasoning and onions to the avocadoes. Use plain greek yogurt instead of sourcream (lessen the fat :)). Also added a layer of lettuce on the sourcream. Mixed the diced tomatoes with fajita seasoning (didn't have any taco seasoning). yummy

Baked French Fries I

Delicious! Loved these. Cooked them for 30 minutes (flipping once) on regular bake, then 5 minutes on each side with convection bake. Spicy : )

Herbed Corn

This was good, but WAY too salty. Lower that, and great!

Stewed Cabbage

Reviewed: Jan. 16, 2011
LOVED IT! Even my super picky sister had some! I used a can of Italian Style Stewed Tomatoes, which just added more flavor. This made A TON, I served it to six people, with half having more than one huge helping and I still had some left over (yum). My suggestions: leave out the salt, since canned tomatoes come with plenty already. Also, go with what other reviewers said and use olive oil rather than butter to saute.

Quick Yeast Rolls

Reviewed: Jan. 16, 2011
This was my first time making dinner rolls, and they were awesome!!! Everyone loved them. I stretched the recipe to 12 rolls, and they were pretty large that way.

Spiced Sweet Roasted Red Pepper Hummus

Reviewed: Jan. 1, 2011
The taste was great. The only problem was that it was grainy. I think next time I will removed the skins of the beans before making the hummus.

Award Winning Soft Chocolate Chip Cookies

AWESOME recipe! But do remember to take them out at about 9 minutes, they won't look ready but they will be and if you overcook then they'be hard.

Blueberry Scones

Reviewed: Aug. 15, 2010
I doubled the blueberries, and didn't use any butter (the directions didn't say when to add it, so I didn't), yet still amazing since we ate them right out of the oven. They are not very sweet at all, which I liked. Also, I made them as drop cookies, the dough is too sticky to use any other way.

To Die For Blueberry Muffins

Reviewed: Jul. 26, 2009
Great recipe! Reduced the sugar by 1/4 cup and thought they were perfect! Also I tried a brown-sugar type topping, but I think next time I will emit a topping altogether. Also, I upped the blueberries by 1/4 cup.

Macadamia Nut Chocolate Chip Cookies

Reviewed: Jun. 18, 2009
I made these for the first time and they were super easy. I recommend using all of the white chocolate and nuts recommended, or at least most of it, because these cookies REALLY spread out in the oven, leaving lots of dough space. So even though it looks like the cookie is jam packed with chips and nuts before the oven, after they look PERFECTION! *Also I used white chocolate chips
