Caribbean Pasta with Shrimp

Pollo Mediterranean

Made this to a T - found it very, very bland. The sour cream coats the mouth, making the sauce almost grainy and quite unpleasant. Would not make again.

Best Brownies

Delicious and versatile - and nuts, chocolate chips etc and it comes out great! However, be prepared to double the mixture if you want a dense, high brownie as the mixture doesn't have much rise to it.

So glad I found this recipe, wonderful and easy! However, be prepared to put in a bit of muscle power coloring it if you don't have a powerful mixer on hand!

Blonde Brownies I

They had a distinct, and not unpleasant flavor, however I found they had a bit of a tinny/metallic aftertaste. It was better not to think of these as brownies, and more like coffee slice.

Peppered Shrimp Alfredo

Having found this recipe, I make this all the time! You can add all kinds of vegetables alongside or instead of the bell pepper - green beans and crunchy broccoli work really well. Also, a mixture of red and yellow bell pepper make for a visual feast. Absolutely delicious, and so easy!

Coconut-Lime Cheesecake with Mango Coulis

Fantastic! Added a few drops of green food coloring to the lime level, which made for a spectacular finish with the two layers being different colors. Definitely taste your coulis before using it - I found I had to almost triple the sugar (not a very sweet mango). Also, next time I'll line the springform pan instead of just greasing it - getting the cake out was a bit messy.

Big Soft Ginger Cookies

Followed other reviewers suggestions and substituted orange juice for water. Also used golden syrup instead of molasses, as we don't get it in New Zealand. They came out great. Next time I'll make them smaller and sandwich them with buttercream icing to make ginger kisses.

Cinnamon Coffee Cake I

Delicious, impressively tall cake! When I make it again though, I wont 1/3 the nut mixture between the layers, as it doesn't work as a topping and makes the cake hard to remove from the tin and cut. Instead I'll 1/2 it between the layers and perhaps make a drizzled icing topping.

English Trifle to Die For

Loved by all! Too add more berry flavor, I heated some frozen berries in sugar, stirring constantly until it had a runny, liquid texture then added jam to the mix. Bought it off the heat and allowed it to cool before adding a shot of blackberry nip and dunking the sponge squares until they were half-coated. Really added to the texture of the trifle, and gave it a larger depth of flavor. Yum!

BBQ Teriyaki Pork Kabobs

Fairly good, though be careful to keep the basting sauce warm, otherwise it forms a skin. Removed the red onion as I don't care for it, and served the kabobs on rice with a crunchy salad.

Nice simple dish, added some chicken baked in cajun spice to make it into a dinner meal. Elegant and fresh, well enjoyed by all. Served it with fresh beans on the side.

Thai Green Curry Chicken

If you don't like a sweet curry, halve or quarter the sugar in this - It comes out quite sugary. Added some beans for color, and am confident you could add any amount of vegetables (beans, carrots, bamboo shoot, pumpkin) and it would only add to the flavor of this curry. The sauce was fragrant and thick - very well received by the family!

Apple Stuffed Chicken Breast

Found this quite yucky, to be honest. Even with cinnamon, the apple/cheese has such a bland flavor that it's basically just steamed chicken, and wasn't a pleasant dish at all. Will not make again.
