I'm 'Mommy' to an eight-month-old baby and step-mom to a ten-year-old girl, so I'm non-stop--to say the least! I love life and traveling just as much as I love cooking. Although I live in the city, my heart is in the country, surrounded by horses, cows, and pets.
My favorite things to cook
I love hearty, flavorful meals. I don't do tons of sweets, but those that I fall in love with turn into repeats. :) I'm a Southern cook from south Louisiana, so I love delicious Cajun cuisine with a passion. I've also spent some time abroad, so I've tuned my palate for other flavors too, my favorite of which is French food. You simply can't go wrong with French food (or France!)! I've been to Morocco, Benin, and Jamaica, in addition to France, so I've grown to love dishes from each of those places.
My favorite family cooking traditions
I love the holiday season because my mom and I always cook up a storm during this time of year. I also have fond memories of helping my grandma make an endless number of sweet potato pies during the holiday season. I miss being able to do that now. But, I'm looking forward to creating new cooking traditions with my own baby girl.

Simple Roasted Butternut Squash
So yummy! I've been wanting to try butternut squash, but I get scared of baked squashes because they get too mushy and the flavor that I'm not a huge fan of comes out. This way, they taste more like bites of potatoes and I love, love the garlic flavor! Will definitely make this again! (I added extra garlic, too.)

Pesto Chicken
Quick and easy dinner. Yummy. I used bacon instead of prosciutto and put it on the top rack so it would crisp the bacon a bit, which caused a shell of sorts that trapped in heat and moisture. :) I think this would also be yummy with a nice meltable cheese inside.

Chicken Enchiladas V
As-is, I give this recipe a 3. It lacked serious seasoning, but was a great base. I made it per the instructions, then after it was done, added a few things. Here's what I added: one packet McCormick brown gravy mix, extra kosher salt (to taste), a few dashes of Tony Chachere's seasoning. I'll make it again, but next time I'll add a can of sweet peas (I think they're important in beef stew) and extra carrots. It's yummy with the additions, though. Also, I didn't have red wine (the only part I initially didn't do per recipe), but I deglazed the pan with the same amount if water.
