Garbanzo Bean Chocolate Cake (Gluten Free!)
Pretty good, although I might use more sugar next time. I over cooked it even though it was in there for 40 mins. Kind of like a large brownie. I used a blender. First I beat the eggs, then I put the eggs and the beans in a separate bowl. Then I blended the bean mixture in small 1/2 cup batches in the blender on Puree setting. I transferred each blended batch to another bowl and then when all was smooth as baby food, I combined it with the rest of the ingredients in the blender. About when I added the chocolate, I had to put it on a higher speed. I stopped every time I heard the motor change tone (air bubbles.) Make sure you SCRAPE OWN THE SIDES often so you don't get a stray chunk of bean in the batter. I lined the bottom with parchment paper and dusted the sides with cornstarch. I made this for a friend who is Celiac but I don't have rice flour and all the special gluten-free flours on hand. I am guessing you could actually do this with unflavored hummus instead of the beans, but you would have to use less than 19 ounces and there is a possibility it could be grainy. It would make it a lot easier to make, though. Terrific recipe. I love that it's so much more healthy with the beans...

Delicious Ham and Potato Soup
The kids loved it. Low cost, nutritious and delicious. I might add carrot wheels next time to increase the veggir intake.
